3 Delicious Paella Recipes to Try at Home

Paella is a traditional Spanish rice dish that originated in Valencia. It is known for its rich flavors, colorful ingredients, and the signature saffron-infused rice. While the most famous version includes seafood, there are many variations to explore. Here are three delicious paella recipes to try at home.

1. Classic Valencian Paella

This traditional version stays true to its roots with a combination of meat and vegetables.

Ingredients:

  • 3 tablespoons olive oil
  • 300 grams chicken thighs, chopped
  • 200 grams rabbit meat, chopped
  • 150 grams green beans, chopped
  • 100 grams butter beans
  • 2 tomatoes, grated
  • 1 teaspoon smoked paprika
  • 1 litre chicken broth
  • 250 grams short-grain rice (such as Bomba rice)
  • 1 pinch saffron threads
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 sprigs rosemary

Instructions:
Heat the oil in a wide, shallow pan over medium heat. Brown the chicken and rabbit, then add the green beans and butter beans. Stir in the grated tomatoes and paprika, cooking for a few minutes. Pour in the broth, bring to a boil, and add the rice, saffron, salt, and pepper. Spread the rice evenly and simmer for 15 minutes without stirring. Add the rosemary and cook for another 5 minutes until the rice is tender. Let it rest before serving.

2. Seafood Paella

A popular version featuring fresh seafood for a taste of the Mediterranean.

Ingredients:

  • 3 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 2 tomatoes, grated
  • 1 teaspoon smoked paprika
  • 1 litre fish broth
  • 250 grams short-grain rice
  • 1 pinch saffron threads
  • 200 grams mussels, cleaned
  • 200 grams shrimp, peeled and deveined
  • 150 grams squid rings
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons chopped parsley
  • 1 lemon, cut into wedges

Instructions:
Heat the oil in a paella pan over medium heat. Sauté the onion, garlic, and bell pepper until softened. Add the grated tomatoes and paprika, cooking for a few minutes. Pour in the broth and bring to a boil. Stir in the rice, saffron, salt, and pepper. Spread the rice evenly and simmer for 15 minutes. Add the mussels, shrimp, and squid, cooking until the seafood is done and the mussels open. Sprinkle with parsley and serve with lemon wedges.

3. Vegetarian Paella

A delicious meat-free option packed with vegetables and bold flavors.

Ingredients:

  • 3 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 2 tomatoes, grated
  • 100 grams green beans, chopped
  • 100 grams peas
  • 1 teaspoon smoked paprika
  • 1 litre vegetable broth
  • 250 grams short-grain rice
  • 1 pinch saffron threads
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons chopped parsley
  • 1 lemon, cut into wedges

Instructions:
Heat the oil in a paella pan. Sauté the onion, garlic, and bell peppers until soft. Add the tomatoes, green beans, peas, and paprika, cooking for a few minutes. Pour in the broth and bring to a boil. Stir in the rice, saffron, salt, and pepper. Spread the rice evenly and let it simmer for 20 minutes. Garnish with parsley and serve with lemon wedges.
