Ingredients:

  • 4 large tomatoes, diced
  • 2 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 10 fresh basil leaves, chopped
  • Salt and pepper to taste
  • 1 baguette, sliced

Instructions:

  1. Mix the diced tomatoes, garlic, olive oil, balsamic vinegar, basil, salt, and pepper in a bowl.
  2. Toast the baguette slices until golden.
  3. Spoon the tomato mixture onto each slice and serve immediately.

2. Roasted Tomato Soup

  • 1 kg ripe tomatoes, halved
