5 Quick Flatbreads You Can Bake on a Griddle

Flatbreads are the unsung heroes of quick, homemade meals. With minimal ingredients and no need for an oven, these versatile breads can be made right on a griddle or heavy skillet. Whether you’re wrapping up a sandwich, scooping up a curry, or adding a warm element to a salad, these five flatbreads are fast favorites in kitchens around the world.

1. Roti
Roti is a staple in many South Asian households, known for its soft texture and neutral flavor that pairs perfectly with vegetables, dals, and meat dishes. Cooked on a hot griddle or tava, roti puffs slightly and develops golden brown spots when perfectly done. It’s an excellent everyday bread that comes together quickly and requires no leavening agent, making it ideal for busy weeknights.

2. Chapati
Similar to roti, chapati is another unleavened Indian flatbread but typically thinner and more pliable. It’s often served alongside curries or used to scoop up spicy dishes by hand. A hot griddle is key to cooking chapatis evenly and quickly, producing just the right balance of softness and char. Chapatis are also ideal for wraps, thanks to their foldable texture.

3. Tortillas
Whether made from wheat or corn, tortillas are a quick-cook flatbread essential in Latin American cuisine. Cooked on a dry, hot griddle or comal, tortillas are ready in minutes and can be used for tacos, burritos, quesadillas, or even flatbread pizzas. Their flexibility and speed make them a go-to option for spontaneous meals or leftover makeovers.

4. Pita
While traditional pita is often baked in high-heat ovens to create that iconic pocket, a griddle can also be used for a quicker version with a slightly chewier texture. Cooked flat on both sides, griddle-baked pita can still puff up slightly in the center and work beautifully as a wrap, sandwich base, or dipper for hummus and spreads.

5. Paratha
This layered, pan-fried Indian flatbread is richer and flakier than roti or chapati, often brushed with ghee or oil between folds. Parathas are cooked low and slow on a griddle to allow the layers to crisp and brown. They pair beautifully with pickles, yogurt, or a cup of chai, and can also be stuffed with spiced vegetables or meats for a more filling option.

Griddle-baked flatbreads offer a fast, fuss-free way to bring freshly made bread to your table. With a little practice and a hot surface, you can whip up one of these global classics in just minutes—no oven required.
