1. Miso Caramel Swirl Ice Cream

Sweet meets savory in this umami-packed ice cream. The miso paste adds a deep, salty complexity to the rich caramel swirl, creating a perfectly balanced flavor profile.

Ingredients:

  • 500 ml whole milk
  • 250 ml heavy cream
  • 150 g granulated sugar
  • 4 large egg yolks
  • 1 tbsp white miso paste
  • 100 g caramel sauce (store-bought or homemade)

Instructions:

  1. Heat the milk and heavy cream in a saucepan over medium heat until warm but not boiling.
  2. In a separate bowl, whisk the egg yolks and sugar until pale and thick.
  3. Slowly pour the warm milk into the egg mixture, whisking constantly.
  4. Return the mixture to the saucepan and cook over low heat, stirring until it thickens and coats the back of a spoon.
  5. Strain through a fine sieve, then whisk in the miso paste.
  6. Chill in the refrigerator for at least 4 hours, then churn in an ice cream maker.
  7. Swirl in the caramel sauce before freezing for an additional 2 hours.

2. Avocado Honey-Lime Ice Cream

Creamy avocado isn’t just for toast! Blended with honey and a touch of fresh lime juice, this ice cream is smooth, slightly tangy, and naturally sweet.

Ingredients:

  • 2 ripe avocados
  • 250 ml whole milk
  • 250 ml heavy cream
  • 100 g honey
  • Juice and zest of 1 lime
  • 1 tsp vanilla extract

Instructions:

  1. Blend all ingredients until smooth.
  2. Chill the mixture for 2 hours in the refrigerator.
  3. Churn in an ice cream maker according to the manufacturer’s instructions.
  4. Freeze for at least 2 hours before serving.

3. Earl Grey & Lavender Ice Cream

For a sophisticated and aromatic treat, try infusing your ice cream with Earl Grey tea and dried lavender.

Ingredients:

  • 500 ml whole milk
  • 250 ml heavy cream
  • 4 Earl Grey tea bags
  • 1 tbsp dried lavender
  • 150 g granulated sugar
  • 4 large egg yolks

Instructions:

  1. Heat the milk and cream over medium heat. Add the tea bags and lavender, then steep for 15 minutes.
  2. Strain the mixture, discarding the tea bags and lavender.
  3. In a bowl, whisk the sugar and egg yolks.
  4. Slowly pour in the warm milk mixture, whisking constantly.
  5. Return to the saucepan and cook over low heat until thickened.
  6. Strain again and chill for at least 4 hours.
  7. Churn in an ice cream maker, then freeze for 2 more hours.

4. Black Sesame & Coconut Ice Cream

Nutty black sesame pairs wonderfully with the tropical richness of coconut milk, creating a striking dark-colored dessert.

Ingredients:

  • 400 ml coconut milk
  • 250 ml whole milk
  • 100 g black sesame seeds, toasted and ground
  • 150 g granulated sugar
  • 4 large egg yolks

Instructions:

  1. Heat the coconut milk and whole milk in a saucepan.
  2. In a separate bowl, whisk sugar and egg yolks.
  3. Slowly add the warm milk mixture to the eggs, whisking constantly.
  4. Return to the saucepan and cook over low heat until thickened.
  5. Stir in the ground black sesame.
  6. Chill for 4 hours, churn, then freeze for 2 more hours.

5. Basil & Strawberry Balsamic Ice Cream

Fresh basil and strawberries may sound unusual, but the herbaceous notes of basil enhance the sweetness of the berries, while balsamic vinegar adds depth.

Ingredients:

  • 500 ml whole milk
  • 250 ml heavy cream
  • 150 g granulated sugar
  • 4 large egg yolks
  • 100 g fresh basil leaves
  • 200 g strawberries, chopped
  • 2 tbsp balsamic vinegar

Instructions:

  1. Heat the milk and cream, then steep the basil leaves for 15 minutes.
  2. Strain out the basil and reheat the mixture.
  3. In a separate bowl, whisk sugar and egg yolks.
  4. Slowly mix in the warm milk mixture, then cook until thickened.
  5. Mash the strawberries with balsamic vinegar and fold into the chilled base.
  6. Churn, then freeze for 2 hours.
