1. Chilled Cucumber & Yogurt Soup

Cool, creamy, and full of flavour, this soup is the ultimate no-cook starter or light lunch. Simply blend together peeled cucumber, plain Greek yogurt, a splash of lemon juice, garlic, olive oil, and a handful of fresh herbs like dill or mint. Chill for at least an hour and serve with a drizzle of olive oil and crusty bread.

2. Grilled Halloumi & Watermelon Salad

Sweet, salty, juicy, and just a little smoky—this salad is summer on a plate. Slice watermelon into bite-sized chunks and toss with grilled halloumi, fresh mint, rocket, and a quick dressing made from lime juice, olive oil, and honey. It’s a crowd-pleaser and comes together in minutes.

3. Lemony Chicken Skewers with Herbed Couscous

For an easy weeknight dinner or relaxed outdoor lunch, marinate chicken thighs in olive oil, lemon zest, garlic, and dried oregano, then skewer and grill until golden and juicy. Serve with fluffy couscous tossed with chopped parsley, coriander, spring onions, and a sprinkle of feta. It’s simple, satisfying, and sunshine-approved.

4. Zucchini & Corn Fritters with Avocado Cream

Crispy on the outside, tender inside—these golden fritters are perfect for brunch or a light dinner. Mix grated zucchini, corn kernels, spring onions, flour, and egg into a thick batter. Pan-fry in a little oil and serve with a quick avocado cream made from mashed avocado, lemon juice, and Greek yogurt. Add a fried egg on top to make it a full meal.

5. Mango & Coconut Rice Pudding Pots

A tropical dessert that feels indulgent but is surprisingly easy. Cook jasmine rice in coconut milk with a little sugar and a pinch of salt until thick and creamy. Let it cool, then layer with fresh mango slices and toasted coconut flakes. Serve chilled in glasses or jars for a pretty finish.
