What you’ll need:

  • 1 tbsp olive oil
  • 1 onion (or onion flakes)
  • 2 garlic cloves (or garlic powder)
  • 1 can chickpeas, drained
  • 1 can chopped tomatoes
  • 2 tbsp tomato paste
  • 750 ml vegetable broth (or water + bouillon)
  • 1 tsp dried basil
  • Salt, pepper, and a pinch of sugar

Method:
Sauté onion and garlic in olive oil until soft. Add tomato paste, tomatoes, chickpeas, broth, and seasonings. Simmer for 15–20 minutes. Blend half the soup for a creamy texture while leaving some chunks for bite.

2. Pantry Pasta with Garlic Oil and Beans

Think of this as a rustic Italian pasta e fagioli, simplified and ready in minutes.

What you’ll need:

  • 250 g dried pasta (spaghetti or penne)
  • 3 tbsp olive oil
  • 2–3 garlic cloves, sliced
  • 1 can white beans (cannellini or butter beans), drained
  • 1 tsp chili flakes
  • Salt, pepper
  • Grated Parmesan (optional)

Method:
Cook pasta al dente. In a pan, gently heat olive oil and garlic until fragrant, then add beans and chili flakes. Stir in cooked pasta and season. Toss everything together until hot.

Method:
Bring oats, liquid, spices, and salt to a simmer and cook until thickened (about 5–7 minutes). For the compote, heat canned or dried fruit with a spoonful of sugar and a splash of water until syrupy.
