7 Recipes to See You Through the Changing Seasons

As the seasons shift, so do our cravings and the ingredients available at their freshest. Whether you’re transitioning from winter to spring, summer to autumn, or anywhere in between, these seven recipes will keep you satisfied and nourished throughout the year. From warming soups to refreshing salads, here are the perfect dishes to match the ever-changing weather.

1. Roasted Butternut Squash Soup (Perfect for Autumn & Winter)

When the temperatures drop, a bowl of creamy butternut squash soup is the ultimate comfort food. This dish is rich, velvety, and full of seasonal flavors.

Ingredients:

  • 1 medium butternut squash, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 750ml vegetable broth
  • 200ml coconut milk
  • 1 tsp ground cinnamon
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 200°C. Toss butternut squash cubes with olive oil, salt, and pepper, then roast for 25 minutes.
  2. In a pot, sauté onions and garlic until soft. Add roasted squash and vegetable broth, then simmer for 10 minutes.
  3. Blend until smooth, then stir in coconut milk and cinnamon. Serve warm.

2. Citrus & Avocado Salad (A Light Spring Dish)

As the chill of winter fades, fresh, zesty salads are a great way to welcome spring. This citrus and avocado salad is light yet satisfying.

Ingredients:

  • 2 oranges, peeled and sliced
  • 1 avocado, sliced
  • 100g mixed salad greens
  • 30g walnuts, chopped
  • 50g feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions:

  1. Arrange salad greens on a plate, then layer with oranges, avocado, walnuts, and feta.
  2. Drizzle with olive oil and lemon juice, then season with salt and pepper.

3. Spring Vegetable Risotto (A Seasonal Favorite)

Risotto is a perfect dish for the changing seasons, and this version highlights fresh spring vegetables.

Ingredients:

  • 250g Arborio rice
  • 750ml vegetable broth
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 100g asparagus, chopped
  • 100g peas
  • 50g Parmesan cheese, grated
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. In a pan, heat olive oil and sauté onions and garlic. Add rice and toast for 2 minutes.
  2. Gradually add vegetable broth, stirring frequently until absorbed.
  3. Stir in asparagus, peas, butter, and Parmesan. Cook until creamy, then season and serve.

4. Grilled Chicken with Mango Salsa (A Summer Delight)

As summer approaches, light and fruity dishes become more appealing. This grilled chicken with mango salsa is fresh and flavorful.

Ingredients:

  • 2 chicken breasts
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tbsp olive oil
  • 1 ripe mango, diced
  • 1 small red onion, chopped
  • 1 tbsp lime juice
  • 1 tbsp fresh coriander, chopped

Instructions:

  1. Season chicken breasts with paprika, salt, and olive oil. Grill for 6-8 minutes per side.
  2. In a bowl, mix mango, red onion, lime juice, and coriander.
  3. Serve grilled chicken with mango salsa on top.

5. Hearty Lentil Stew (A Warming Winter Classic)

Lentil stew is a perfect way to stay warm and nourished during colder months.

Ingredients:

  • 200g lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (400g)
  • 750ml vegetable broth
  • 1 tsp cumin
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. In a pot, sauté onions, carrots, and garlic in olive oil.
  2. Add lentils, diced tomatoes, vegetable broth, and cumin. Simmer for 30 minutes.

6. Chilled Cucumber Soup (A Refreshing Summer Option)

On hot summer days, a chilled cucumber soup is both cooling and hydrating.

Ingredients:

  • 2 cucumbers, peeled and chopped
  • 250ml Greek yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tbsp fresh dill, chopped
  • Salt and pepper to taste

Instructions:

  1. Blend all ingredients until smooth.
  2. Chill in the fridge for at least 30 minutes before serving.

7. Apple & Cinnamon Baked Oatmeal (A Cozy Autumn Breakfast)

As the leaves begin to fall, warm breakfasts are the perfect way to start the day.

Ingredients:

  • 200g rolled oats
  • 1 apple, diced
  • 500ml milk or almond milk
  • 2 tbsp honey
  • 1 tsp cinnamon
  • 1 tsp baking powder

Instructions:

  1. Preheat oven to 180°C. Mix all ingredients in a baking dish.
  2. Bake for 30 minutes until golden brown.
