8 Effortless Slow Cooker Recipes for Cozy, Lazy Days

Nothing beats the convenience of a slow cooker on those days when you just want to set it and forget it. Whether you’re in the mood for a hearty stew, a comforting pasta dish, or a simple yet flavorful meal, these 8 slow cooker recipes will have you covered. Perfect for busy weeknights or lazy weekends, each of these recipes requires minimal effort while delivering maximum flavor.

1. Slow Cooker Beef Stew

Ingredients:

  • 2 lbs beef chuck, cut into cubes
  • 4 carrots, sliced
  • 3 potatoes, cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp flour (optional, for thickening)

Instructions:

  1. Add all ingredients to the slow cooker.
  2. Cook on low for 7-8 hours or high for 4-5 hours.
  3. If you prefer a thicker stew, mix flour with a bit of water and stir in during the last 30 minutes.
  4. Remove the bay leaf before serving.

2. Slow Cooker Chicken and Rice

Ingredients:

  • 2 lbs boneless, skinless chicken breasts
  • 1 1/2 cups uncooked long-grain rice
  • 3 cups chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions:

  1. Add chicken, rice, broth, onion, and garlic to the slow cooker.
  2. Cook on low for 6 hours or high for 3 hours.
  3. Stir in peas and carrots in the last 30 minutes of cooking.
  4. Shred the chicken before serving.

3. Slow Cooker Pulled Pork

Ingredients:

  • 3 lbs pork shoulder
  • 1 cup BBQ sauce
  • 1/4 cup apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions:

  1. Place the pork shoulder in the slow cooker.
  2. In a bowl, mix BBQ sauce, vinegar, Worcestershire sauce, and spices.
  3. Pour sauce over pork and cook on low for 8 hours or high for 4 hours.
  4. Shred with forks and mix with sauce before serving.

4. Slow Cooker Chili

Ingredients:

  • 1 lb ground beef or turkey
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) black beans, drained
  • 1 can (28 oz) crushed tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions:

  1. Brown the ground meat in a pan and drain excess fat.
  2. Add all ingredients to the slow cooker.
  3. Cook on low for 6-8 hours or high for 4 hours.
  4. Serve with shredded cheese and sour cream if desired.

5. Slow Cooker Mac and Cheese

Ingredients:

  • 2 cups elbow macaroni, uncooked
  • 3 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1/2 tsp salt
  • 1/2 tsp mustard powder

Instructions:

  1. Add all ingredients to the slow cooker.
  2. Cook on low for 2-3 hours, stirring occasionally.
  3. Serve warm.

6. Slow Cooker Potato Soup

Ingredients:

  • 4 large potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions:

  1. Add all ingredients except cream to the slow cooker.
  2. Cook on low for 7-8 hours or high for 4 hours.
  3. Blend part of the soup for a creamy texture.
  4. Stir in heavy cream and serve.

7. Slow Cooker Honey Garlic Chicken

Ingredients:

  • 4 boneless, skinless chicken thighs
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1 tbsp cornstarch (optional for thickening)

Instructions:

  1. Place chicken in the slow cooker.
  2. Mix honey, soy sauce, garlic, and ginger in a bowl.
  3. Pour over chicken and cook on low for 6 hours or high for 3 hours.
  4. If desired, thicken sauce with cornstarch mixed with water.

8. Slow Cooker Teriyaki Meatballs

Ingredients:

  • 1 lb frozen meatballs
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1 tbsp sesame seeds

Instructions:

  1. Add all ingredients to the slow cooker.
