How to Make Dim Sum at Home

Dim sum is a beloved culinary tradition originating from Cantonese cuisine, typically enjoyed in small portions, often accompanied by tea. Making dim sum at home can be a fun and rewarding experience. Here’s a guide to help you create your own delicious dim sum spread.

Ingredients

For the Dough:

  • 2 cups all-purpose flour
  • 3/4 cup boiling water
  • 1/4 cup cold water
  • A pinch of salt

For the Filling (Pork and Shrimp):

  • 1 cup ground pork
  • 1 cup shrimp, peeled and chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger, grated
  • 2 green onions, finely chopped
  • Salt and pepper to taste

Equipment Needed

  • Mixing bowls
  • Rolling pin
  • Steamer (bamboo or metal)
  • Parchment paper or cabbage leaves (to line the steamer)

Instructions

1. Prepare the Dough:

  • In a bowl, combine the flour and salt. Gradually pour in the boiling water while stirring with a fork or chopsticks until it forms a shaggy dough.
  • Add cold water and knead the dough on a floured surface for about 5-10 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

2. Make the Filling:

  • In a large bowl, combine ground pork, chopped shrimp, soy sauce, oyster sauce, sesame oil, ginger, green onions, and seasoning. Mix well until all ingredients are thoroughly combined.

3. Roll Out the Dough:

  • After resting, divide the dough into two portions. Roll out one portion on a floured surface until it’s about 1/8 inch thick.
  • Use a round cutter (about 3 inches in diameter) to cut out circles from the dough.

4. Assemble the Dumplings:

  • Place a small spoonful of filling (about 1 tablespoon) in the center of each dough circle.
  • Fold the dough over the filling to create a half-moon shape. Pinch the edges to seal tightly. You can also pleat the edges for a more traditional look.

5. Prepare the Steamer:

  • Line your steamer with parchment paper or cabbage leaves to prevent sticking. Arrange the dumplings in a single layer, leaving space between them to allow for expansion.

6. Steam the Dumplings:

  • Bring water to a boil in a pot, then reduce to a simmer. Place the steamer over the pot and steam the dumplings for about 10-12 minutes, or until they are cooked through and the dough is translucent.

7. Serve:

  • Remove the dumplings from the steamer and serve them hot with soy sauce, chili oil, or vinegar for dipping.

Tips for Success

  • Experiment with Fillings: Dim sum fillings can vary widely. Try combinations of vegetables, chicken, or beef to suit your taste.
  • Make Ahead: You can prepare the dumplings ahead of time and freeze them. Steam from frozen for an additional few minutes.
  • Variety: Include other dim sum favorites like buns (char siu bao) or spring rolls to create a more extensive spread.
