How to Make Lamb Kofta at Home

Lamb kofta is a flavorful dish that combines ground lamb with fragrant spices, herbs, and seasonings. Popular in Middle Eastern and Mediterranean cuisines, lamb kofta can be served as skewers, patties, or meatballs. Whether grilled, baked, or pan-fried, this dish is a crowd-pleaser. Here’s a simple recipe to make lamb kofta at home.

Ingredients

  • 500g ground lamb
  • 1 small onion, finely grated
  • 2 garlic cloves, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons fresh coriander, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon chili powder (optional)
  • Salt and black pepper to taste
  • 2 tablespoons breadcrumbs (optional, for binding)
  • Olive oil (for brushing)

Instructions

1. Prepare the Mixture

In a large mixing bowl, combine the ground lamb, grated onion, minced garlic, parsley, coriander, cumin, ground coriander, cinnamon, paprika, chili powder, salt, and pepper. Mix well until the spices and herbs are evenly distributed throughout the meat. If the mixture feels too wet, add breadcrumbs to help bind it.

2. Shape the Kofta

Using your hands, shape the mixture into small oblong patties or balls. If you prefer skewers, mold the meat around wooden or metal skewers to create long, sausage-like shapes.

3. Chill the Kofta

Place the shaped kofta in the refrigerator for 20–30 minutes. This helps them hold their shape during cooking.

4. Cook the Kofta

  • Grilling: Preheat your grill or barbecue to medium-high heat. Brush the kofta with olive oil and grill for 3–4 minutes per side, or until fully cooked.
  • Pan-Frying: Heat a non-stick skillet with a drizzle of olive oil. Cook the kofta over medium heat for 5–6 minutes, turning occasionally, until browned and cooked through.
  • Baking: Preheat your oven to 200°C (400°F). Place the kofta on a lined baking sheet and bake for 15–20 minutes, turning halfway through.

5. Serve and Enjoy

Serve the lamb kofta hot with pita bread, a fresh salad, and your favorite dips like tzatziki, hummus, or garlic yogurt sauce.
