How to Make Borscht at Home

Borscht is a vibrant, hearty soup with roots in Eastern Europe, beloved for its bold flavors and beautiful ruby-red color. Made primarily with beets, it’s a versatile dish that can be served hot or cold, as a starter or a main course. Here’s how you can make this comforting soup at home.

Ingredients

To make a classic pot of borscht, you’ll need:

  • 4 medium-sized beets (peeled and grated)
  • 2 medium carrots (peeled and grated)
  • 1 medium onion (finely chopped)
  • 3 medium potatoes (peeled and diced)
  • 2 cups of shredded cabbage
  • 3 cloves of garlic (minced)
  • 1 can (400g) of diced tomatoes or 2 fresh tomatoes (chopped)
  • 6 cups of vegetable or beef stock
  • 2 tablespoons of sunflower oil
  • 2 tablespoons of vinegar or lemon juice
  • 1 teaspoon of sugar
  • Salt and black pepper (to taste)
  • Fresh dill (chopped, for garnish)
  • Sour cream (optional, for serving)

Instructions

  1. Prepare the vegetables
    Peel and grate the beets and carrots, chop the onions, and dice the potatoes. Shred the cabbage and mince the garlic.
  2. Sauté the aromatics
    In a large pot, heat the sunflower oil over medium heat. Add the onions and garlic and sauté until soft and fragrant, about 3 minutes.
  3. Cook the beets and carrots
    Add the grated beets and carrots to the pot. Stir well and cook for 5-7 minutes, allowing the vegetables to soften slightly.
  4. Add the potatoes and stock
    Add the diced potatoes and stock to the pot. Bring the mixture to a boil, then reduce the heat to a simmer. Cook for 10-15 minutes, or until the potatoes are tender.
  5. Incorporate the tomatoes and cabbage
    Stir in the diced tomatoes (or fresh tomatoes) and shredded cabbage. Let the soup simmer for another 10 minutes.
  6. Balance the flavors
    Add the vinegar or lemon juice, sugar, salt, and pepper. Taste the soup and adjust the seasoning as needed.
  7. Let it rest
    Remove the pot from the heat and let the borscht sit for about 10 minutes to allow the flavors to meld.
  8. Serve and garnish
    Ladle the borscht into bowls, garnish with fresh dill, and add a dollop of sour cream if desired. Serve with crusty bread or rye bread on the side.

Tips for Perfect Borscht

  • Add protein: If you prefer a meaty borscht, include cooked beef or pork chunks. Alternatively, use beans for a vegetarian option.
  • Use fresh beets: Fresh, raw beets provide the most vibrant color and flavor.
  • Customize the texture: Blend a portion of the soup for a creamier consistency or leave it chunky for a more rustic feel.

Borscht is a comforting, nutrient-rich dish that can be customized to suit any taste. Whether you enjoy it as a warming winter meal or a chilled summer treat, this classic recipe will bring a touch of Eastern European tradition to your table.
