How to Make Beef Stroganoff at Home

Beef Stroganoff is a classic dish originating from Russia, known for its creamy, savory sauce and tender beef strips. It’s a comforting, crowd-pleasing meal that pairs wonderfully with noodles, rice, or mashed potatoes. Here’s how to make this timeless dish at home.

Ingredients

For the beef stroganoff:

  • 500g beef sirloin or tenderloin (sliced into thin strips)
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 cup mushrooms (sliced)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 tablespoon all-purpose flour
  • 1 teaspoon paprika (optional)
  • 1 cup beef broth
  • 1/2 cup sour cream or heavy cream
  • 1 tablespoon Dijon mustard
  • Salt and black pepper (to taste)

For serving:

  • Egg noodles, rice, or mashed potatoes
  • Fresh parsley (chopped, for garnish)

Instructions

1. Prepare the beef
Season the beef strips with salt, pepper, and paprika (if using). Heat a tablespoon of olive oil in a large skillet over medium-high heat. Sear the beef in batches, cooking each side for about 1 minute. Remove the beef and set it aside.

2. Sauté the vegetables
In the same skillet, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant. Stir in the mushrooms and cook until they release their moisture and become golden.

3. Make the sauce
Sprinkle the flour over the sautéed vegetables and stir well to coat. Gradually pour in the beef broth while stirring to prevent lumps. Simmer the mixture for 2-3 minutes until it begins to thicken.

4. Add the cream and mustard
Reduce the heat to low and stir in the sour cream and Dijon mustard. Mix until the sauce is smooth and creamy. Adjust the seasoning with salt and pepper as needed.

5. Combine the beef and sauce
Return the seared beef to the skillet, stirring to coat it in the sauce. Simmer for 2-3 minutes to heat the beef through and meld the flavors. Avoid overcooking to keep the beef tender.

6. Serve
Spoon the beef stroganoff over a bed of cooked egg noodles, rice, or mashed potatoes. Garnish with chopped parsley for a pop of color and added freshness.

Tips for the Perfect Beef Stroganoff

  • Choose the right cut: Tender cuts like sirloin, tenderloin, or ribeye work best for this dish.
  • Don’t overcook the beef: Cook it quickly over high heat to keep it juicy and tender.
  • Customize the sauce: For a tangier flavor, use more mustard. For extra richness, add a splash of cream.
  • Make it your own: Add ingredients like Worcestershire sauce, sherry, or fresh dill for unique variations.

Beef Stroganoff is a hearty and satisfying meal that’s easy to make yet elegant enough for special occasions. With its rich flavors and creamy texture, this dish is sure to become a favorite at your dining table.
