How to Make Baba Ghanoush at Home

Baba ghanoush is a creamy, smoky eggplant dip that’s a staple in Middle Eastern cuisine. Made with roasted eggplant, tahini, garlic, and a few simple seasonings, it’s the perfect appetizer or snack. Here’s how to make this delicious dish at home.

Ingredients

For a serving that yields about 2 cups, you’ll need:

  • 2 large eggplants
  • 3 tablespoons tahini (sesame paste)
  • 2 tablespoons olive oil (plus extra for garnish)
  • 2 garlic cloves, minced
  • 1 tablespoon lemon juice (adjust to taste)
  • 1/2 teaspoon ground cumin
  • Salt to taste
  • Fresh parsley for garnish (optional)
  • Paprika or sumac for garnish (optional)

Instructions

1. Roast the Eggplants

  • Preheat your oven to 220°C (425°F).
  • Poke the eggplants several times with a fork to allow steam to escape.
  • Place the eggplants on a baking sheet lined with foil. Roast for 40-50 minutes, turning them halfway through, until the skin is charred and the flesh is soft.
  • Alternatively, you can grill the eggplants for a more intense smoky flavor.

2. Cool and Peel

  • Once roasted, let the eggplants cool slightly. Peel off the charred skin and discard it. Scoop out the soft flesh and place it in a colander to drain any excess liquid for about 10 minutes.

3. Blend the Ingredients

  • Transfer the drained eggplant to a mixing bowl or a food processor.
  • Add tahini, olive oil, minced garlic, lemon juice, cumin, and a pinch of salt.
  • Mash the mixture with a fork or blend it in short pulses until you achieve your desired consistency—smooth or slightly chunky.

4. Adjust Seasoning

  • Taste the baba ghanoush and adjust the seasoning. Add more lemon juice or salt if needed.

5. Serve and Garnish

  • Transfer the baba ghanoush to a serving dish. Drizzle with olive oil and garnish with chopped parsley, paprika, or sumac for a pop of color and flavor.

  • Use ripe eggplants: Choose firm eggplants with shiny skin for the best flavor.
  • Char the skin well: The smoky flavor of baba ghanoush comes from the charred eggplant skin. Grilling or broiling can enhance this smokiness.

  • Customize the texture: Blend it smooth for a creamy consistency or leave it slightly chunky for a rustic feel.
