5 Not-So-Basic Avocado Recipes

Avocados are known for their creamy texture and rich, buttery flavor, but there’s so much more to do with them beyond simple guacamole or toast. If you’re looking to get creative with this superfood, try these five unique avocado recipes that take things to the next level.

1. Avocado Pesto Pasta
Instead of using traditional basil pesto, this version swaps in avocado for a luxuriously smooth and creamy sauce.

Ingredients:

  • 1 ripe avocado
  • 50g fresh basil leaves
  • 30g grated Parmesan cheese
  • 2 cloves garlic
  • 30ml lemon juice
  • 50ml olive oil
  • 250g pasta
  • Salt and black pepper to taste

Instructions:

  1. Cook pasta according to package instructions.
  2. In a blender, combine avocado, basil, Parmesan, garlic, lemon juice, and olive oil. Blend until smooth.
  3. Toss the cooked pasta with the avocado pesto and season with salt and pepper. Serve immediately.

2. Crispy Avocado Fries
These crunchy avocado fries are perfect as a snack or appetizer.

Ingredients:

  • 2 ripe but firm avocados
  • 50g all-purpose flour
  • 2 eggs, beaten
  • 100g panko breadcrumbs
  • 1 tsp paprika
  • Salt and black pepper to taste
  • Oil for frying

Instructions:

  1. Cut avocados into wedges.
  2. Dredge each wedge in flour, dip in beaten eggs, and coat with panko breadcrumbs mixed with paprika, salt, and pepper.
  3. Heat oil in a pan and fry avocado slices until golden brown. Drain on paper towels and serve with your favorite dipping sauce.

3. Avocado Chocolate Mousse
This decadent dessert is rich, creamy, and completely dairy-free.

Ingredients:

  • 2 ripe avocados
  • 50g cocoa powder
  • 60ml maple syrup or honey
  • 1 tsp vanilla extract
  • 30ml almond milk
  • Pinch of salt

Instructions:

  1. Blend all ingredients until smooth and creamy.
  2. Chill for at least 30 minutes before serving.
  3. Garnish with fresh berries or shaved dark chocolate.

4. Avocado Deviled Eggs
A twist on the classic, this recipe replaces mayonnaise with avocado for a healthier and tastier filling.

Ingredients:

  • 6 hard-boiled eggs
  • 1 ripe avocado
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • Salt and black pepper to taste
  • Paprika for garnish

Instructions:

  1. Slice eggs in half and remove yolks.
  2. Mash yolks with avocado, mustard, lemon juice, salt, and pepper.
  3. Pipe or spoon the filling back into the egg whites.

5. Spicy Avocado and Shrimp Tacos
These flavorful tacos combine creamy avocado with spicy shrimp for a perfect balance of textures and flavors.

Ingredients:

  • 300g shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 2 ripe avocados, mashed
  • 1 tbsp lime juice
  • 4 small tortillas
  • 50g chopped red onion
  • Fresh cilantro for garnish

Instructions:

  1. Heat olive oil in a pan and cook shrimp with chili powder, garlic powder, salt, and pepper until pink and cooked through.
  2. Mix mashed avocados with lime juice and spread onto tortillas.
  3. Top with cooked shrimp, red onion, and fresh cilantro. Serve immediately.
