Buffalo wings are a game-day favorite, a bar-food staple, and a must-have at any gathering. But what’s the best way to cook them? Should you deep-fry, bake, or air-fry? Let’s break down the different methods and see which one delivers the crispiest, most flavorful wings.

The Best Way: Double-Fried Buffalo Wings

For the ultimate crispy texture with juicy, tender meat, double-frying is the way to go. This method ensures that the skin is perfectly golden and crunchy while keeping the inside moist.

How to Make Them:

Ingredients:

  • 1 kg chicken wings
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1L vegetable oil (for frying)

For the Buffalo Sauce:

  • 100g unsalted butter
  • 150ml hot sauce
  • 1 tbsp vinegar
  • 1/2 tsp garlic powder

Instructions:

  1. Pat the wings dry and season with salt, pepper, garlic powder, and paprika.
  2. Heat oil to 160°C and fry wings for 8–10 minutes. Remove and let them rest for 10 minutes.
  3. Increase oil temperature to 190°C and fry again for 3–4 minutes until crispy.
  4. Melt butter and mix with hot sauce, vinegar, and garlic powder. Toss wings in the sauce and serve.

2. Baked Buffalo Wings

  • Pros: Healthier, no need for oil.
  • Cons: Less crispy unless cornstarch or baking powder is used.

Baking at 220°C for about 45 minutes can yield a crispy result, especially if you coat the wings in baking powder. However, it won’t be as crispy as frying.

3. Air-Fried Buffalo Wings

  • Pros: Uses less oil, quick and convenient.
  • Cons: Not as crispy as deep-fried wings.
