Ingredients:

  • 4 bone-in, skin-on chicken thighs

Instructions:

  • Grapefruit segments and fresh dill for garnish

Instructions:

  1. Preheat oven to 190°C (375°F).
  2. In a small saucepan, combine grapefruit juice, honey, soy sauce, and garlic. Simmer over medium heat until thickened slightly, about 5 minutes.
  3. Place salmon fillets on a baking tray lined with parchment. Season with salt and pepper.

4. Lime Cilantro Rice

  • 225g caster sugar

  • Juice of 1 lemon
  • For the drizzle: juice of 1 lemon, 85g caster sugar

Instructions:

  1. Preheat oven to 180°C (350°F). Grease and line a loaf pan.
  2. In a bowl, sift together flour and baking powder.
  3. In a separate large bowl, beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Fold in lemon zest and sifted flour mixture gently.
  6. Pour batter into the prepared pan and bake for 45-50 minutes until a skewer comes out clean.
  7. Mix lemon juice and caster sugar for the drizzle.
  8. While cake is still warm, prick holes in the top with a skewer and pour over the drizzle. Let it soak in and cool before serving.
