How to Make Rainbow Fruit Lollies

Rainbow fruit lollies are colorful, fun, and surprisingly simple to make at home. They combine fresh fruit, natural juices, and a little creativity to create a healthy treat that’s perfect for kids, parties, or a refreshing snack on a warm day. Making them yourself allows you to control the ingredients, reducing added sugar while maximizing flavor and nutrition.

Ingredients

  • Fresh fruits of various colors (strawberries, mango, kiwi, blueberries, grapes, etc.)
  • 250 ml 100% fruit juice (apple, orange, or pineapple work well)
  • Lolly molds or small cups
  • Lolly sticks

Method

  1. Prepare the Fruit
    Wash all fruit thoroughly. Peel and slice larger fruits like mango and kiwi into small cubes. Smaller fruits like blueberries and grapes can be left whole.
  2. Layer the Fruit
    Start with the fruit you want at the bottom of your lollies. Layer different colors to create a rainbow effect. Press each layer gently to ensure the fruit is evenly distributed and won’t float to the top.
  3. Add Juice
    Pour fruit juice over the layered fruits until the molds are almost full. Leave a little space at the top for the lolly sticks.
  4. Insert Sticks
    Place the lolly sticks into the molds. If your molds don’t have built-in slots, wrap the stick in foil and balance it so it stays upright.
  5. Freeze
    Freeze for at least 4–6 hours, or until the lollies are completely solid. For best results, freeze overnight.
  6. Unmold and Serve
    Run warm water over the outside of the molds for a few seconds to loosen the lollies. Gently remove them and serve immediately.

  • Choose fruits with vibrant, contrasting colors to create a true rainbow effect.
  • Use small pieces of fruit to ensure even freezing and easy eating.
  • Layer juices with different flavors for an extra dimension of taste.
  • For extra sweetness without refined sugar, drizzle a little honey or agave syrup over the fruit layers before freezing.

  • Creamy Lollies: Mix yogurt with fruit juice before pouring over the layers for a creamy texture.
  • Sparkling Fruit Lollies: Use sparkling water or soda instead of juice for a fizzy treat.
  • Chocolate-Dipped Lollies: Once frozen, dip the lollies in melted dark chocolate and freeze again for a decadent finish.
