Fold in the passion fruit pulp gently.

Transfer the batter to the prepared loaf tin.

Method

Preheat the oven to 175°C.

Grease and line a 22 cm round cake tin.

Sift together the flour, baking powder and salt.

Beat the butter, sugar and lemon zest until pale and creamy.

Add the eggs one at a time.

Mix in the lemon juice and vanilla.

Fold in the dry ingredients until just combined.

Transfer the batter to the cake tin.

Bake for 40 to 50 minutes.

While the cake is baking, combine the drizzle ingredients in a small saucepan.

Heat gently until the sugar has dissolved.

  • 100 ml sunflower oil
  • 5 ml vanilla extract

Method

Preheat the oven to 180°C.

Combine the flour, baking powder, bicarbonate of soda, salt, sugar and coconut in a large bowl.

In another bowl, whisk together the eggs, milk, oil, vanilla and passion fruit pulp.

Pour the wet ingredients into the dry ingredients.
