Method

Slice the remaining avocado.

Add the hummus.

Scatter over the feta.

Mix the lemon juice, olive oil and oregano.

Drizzle the dressing over the bowls.

Finish with black pepper.

Method

Add the parsley and mint.

Whisk together the olive oil, lemon juice and oregano.

Pour the dressing over the salad.

Toss gently.

Add the feta.

Season with salt and black pepper.

Serve immediately or refrigerate briefly before serving.

15-Minute Egg and Avocado Toast

Egg and avocado toast is quick enough for a busy weekday and versatile enough to adapt with whatever vegetables and herbs you have available.

Ingredients

  • 4 slices wholegrain bread
  • 4 large eggs
  • 1 avocado
  • 1 tomato, sliced
  • 30 g rocket
  • 15 ml fresh lemon juice
  • 10 ml olive oil
  • 2.5 ml paprika
  • Salt and black pepper

Method

Toast the bread.

Mash the avocado with the lemon juice.

Season with salt and black pepper.
