Method

Place the oats and vegetable stock in a saucepan.

Bring to a gentle simmer over medium heat.

Cook for 5 to 7 minutes, stirring regularly, until creamy.

Stir in the milk and cheddar cheese.

Season with smoked paprika, salt and black pepper.

Cook for another minute until the cheese melts.

Meanwhile, heat the olive oil in a frying pan.

Fry the eggs until the whites are set and the edges are crisp.

Divide the oats between two bowls.

Top each serving with a fried egg.

Scatter over the spring onion and parsley.

Savoury Mushroom and Spinach Oats

  • 100 g rolled oats
  • 500 ml vegetable stock
  • 200 g mushrooms, sliced
  • 80 g baby spinach
  • 2 cloves garlic, crushed
  • 15 ml olive oil
  • 30 g grated Parmesan
  • 2.5 ml dried thyme
  • Salt and black pepper
  • 10 g fresh parsley

Method

Heat half the olive oil in a saucepan.

Add the mushrooms and cook over medium-high heat until golden.

Add the garlic and thyme.

Cook for 30 seconds.

Remove half the mushrooms and set aside.

Add the oats and vegetable stock to the saucepan.

Bring to a simmer.

Cook for 5 to 7 minutes, stirring regularly.

Add the spinach and cook until wilted.

Stir in the Parmesan.

Season with salt and black pepper.

Divide the oats between bowls.

Top with the reserved mushrooms.

Drizzle with the remaining olive oil and garnish with parsley.

Spicy Tomato and Egg Oats

Tomatoes, chilli and eggs turn plain oats into a bold breakfast with plenty of flavour. This recipe works particularly well when you want something warming and savoury in the morning.

Ingredients

Serves 2.

  • 100 g rolled oats
  • 400 ml vegetable stock
  • 150 g chopped tomatoes
  • 1 small onion, finely diced
  • 1 clove garlic, crushed
  • 5 ml smoked paprika
  • 2.5 ml chilli flakes
  • 10 ml olive oil
  • 2 large eggs
  • 40 g feta cheese
  • Fresh coriander or parsley
  • Salt and black pepper

Method

Heat the olive oil in a saucepan.

Add the onion and cook for 3 to 4 minutes.

Add the garlic, smoked paprika and chilli flakes.

Cook for 30 seconds.

Add the chopped tomatoes.

Simmer for 5 minutes.

Add the oats and vegetable stock.

Cook for 5 to 7 minutes, stirring occasionally.

Season with salt and black pepper.

Meanwhile, fry or poach the eggs.

Spoon the oats into bowls.

Top each portion with an egg.

Crumble the feta over the top.

Finish with fresh coriander or parsley.

Creamy Spinach and Feta Oats

Feta gives savoury oats a salty, tangy flavour that works particularly well with spinach. This recipe is simple enough for breakfast but substantial enough for lunch.

Ingredients

Serves 2.

  • 100 g rolled oats
  • 450 ml vegetable stock
  • 100 g baby spinach
  • 60 g feta cheese
  • 30 ml milk
  • 1 clove garlic, finely chopped
  • 10 ml olive oil
  • 2.5 ml dried oregano
  • Black pepper
  • 10 g fresh dill or parsley

Method

Heat the olive oil in a saucepan.

  • 100 g rolled oats
  • 500 ml chicken stock
  • 150 g cooked chicken, shredded
  • 1 small carrot, grated
  • ½ red pepper, finely diced
  • ½ onion, finely diced
  • 50 g frozen peas
  • 1 clove garlic, crushed
  • 10 ml olive oil
  • 2.5 ml smoked paprika
  • 2.5 ml dried mixed herbs
  • Salt and black pepper
  • 10 g fresh parsley

Method

Heat the olive oil in a saucepan.

Add the onion, pepper and carrot.

Cook for 4 to 5 minutes.

Add the garlic and smoked paprika.

Cook for 30 seconds.

Add the oats and chicken stock.

Simmer for approximately 6 minutes.

Stir in the peas and shredded chicken.

Cook for another 2 to 3 minutes.

Season with herbs, salt and black pepper.

Add a little extra stock if the oats become too thick.

Spoon into bowls.

Garnish with fresh parsley.

Oats With Caramelised Onion and Cheddar

Slow-cooked onions provide sweetness without turning the dish into a sweet breakfast. Combined with mature cheddar, they create a rich and savoury bowl with plenty of flavour.

Serves 2.

  • 100 g rolled oats
  • 500 ml vegetable stock
  • 1 large onion, thinly sliced
  • 60 g mature cheddar, grated
  • 15 ml olive oil
  • 10 g butter
  • 5 ml Worcestershire sauce
  • 2.5 ml dried thyme
  • Salt and black pepper
  • 10 g fresh chives

Method

Heat the olive oil and butter in a frying pan.

Add the sliced onion.

Cook over low to medium heat for 15 to 20 minutes, stirring occasionally.

Once the onion is soft and golden, add the Worcestershire sauce and thyme.

Cook for another minute.

Meanwhile, cook the oats and vegetable stock in a saucepan for 5 to 7 minutes.

Stir in the cheddar.

Season with black pepper and a little salt.

Divide the oats between bowls.

Top with the caramelised onions.

Finish with chopped chives.

How to Build Your Own Savoury Oats

Once you understand the basic method, you can create your own combinations without following a recipe every time. Start with approximately 50 g of oats per person and cook them with around 250 ml of liquid.

Vegetable stock gives the strongest savoury flavour, while chicken stock works well with poultry-based toppings. Water creates a more neutral base, which is useful when you plan to add strongly flavoured ingredients.

Next, choose vegetables. Mushrooms, spinach, peppers, tomatoes, onions, peas and grated carrots are all easy additions.
