  1. Cape Malay-Style Fish Curry: Ingredients:
  • 500g firm white fish fillets (such as kingklip or hake), cut into chunks
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons Cape Malay curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 cinnamon stick
  • 400ml coconut milk
  • 2 tomatoes, diced
  • 1 tablespoon lemon juice
  • Fresh cilantro, chopped (for garnish)
  • Salt and pepper to taste

Instructions:

  1. Heat the vegetable oil in a large saucepan over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic and grated ginger, and cook for another minute until fragrant.
  3. Stir in the Cape Malay curry powder, turmeric, cumin, coriander, and cinnamon stick. Cook for a minute to release the flavors.
  4. Add the coconut milk, diced tomatoes, and lemon juice. Season with salt and pepper to taste. Simmer the sauce for about 10 minutes, allowing the flavors to meld together.
  5. Gently place the fish chunks into the sauce and cook for another 5-7 minutes until the fish is cooked through and flakes easily.
  6. Serve the fish curry hot, garnished with freshly chopped cilantro. Pair it with steamed rice or roti for a complete meal.
  7. Durban-Style Fish Curry: Ingredients:
  • 500g firm white fish fillets (such as kingklip or yellowtail), cut into chunks
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons Durban curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 tomatoes, diced
  • 1 cup fish or vegetable broth
  • 1 cup coconut milk
  • Fresh curry leaves (optional)
  • Fresh cilantro, chopped (for garnish)
  • Salt and pepper to taste

Instructions:

  1. Heat the vegetable oil in a large skillet or pot over medium heat. Add the chopped onion and sauté until golden brown.
  2. Add the minced garlic and grated ginger, and cook for another minute until fragrant.
  3. Stir in the Durban curry powder, turmeric, cumin, and coriander. Cook for a minute to toast the spices.
  4. Add the diced tomatoes, fish or vegetable broth, and coconut milk. If available, add a few fresh curry leaves for additional flavor. Season with salt and pepper to taste. Simmer the sauce for 15-20 minutes until it thickens slightly.
  5. Gently place the fish chunks into the sauce and cook for another 5-7 minutes until the fish is cooked through.
  6. Serve the Durban-style fish curry hot, garnished with freshly chopped cilantro. Accompany it with basmati rice or naan bread.
