In this fusion recipe, we reimagine bobotie by using zucchini as the vessel, creating a healthier and vegetable-packed version without compromising on taste.

To make these South African Bobotie Stuffed Zucchini Boats, you’ll need the following ingredients:

  • 4 large zucchini
  • 1 pound ground beef or lamb
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon

  5. Stir in the curry powder, turmeric, cinnamon, and coriander. Cook for another minute or until the spices become fragrant.
  6. Add the reserved zucchini flesh to the skillet, along with the apricot jam and Worcestershire sauce. Mix well to combine all the flavors. Cook for a few minutes until the zucchini is tender and the mixture is well combined.
  7. In a separate bowl, whisk together the breadcrumbs, milk, and eggs until you have a smooth mixture. Season with salt and pepper.
  8. Pour the breadcrumb mixture over the meat mixture in the skillet and stir well to combine. Allow the mixture to cook for a few more minutes until it thickens slightly.
  9. Spoon the bobotie mixture into the hollowed-out zucchini boats, filling them generously. Place the stuffed zucchini boats in the prepared baking dish.
  10. Bake in the preheated oven for about 25-30 minutes or until the zucchini is tender and the tops are golden brown.
  11. Once cooked, remove from the oven and let the zucchini boats cool slightly. Garnish with fresh cilantro or parsley for a vibrant touch.
