  • 2 slices of whole wheat bread, crusts removed and soaked in water
  • 1 cup low-fat milk
  • 2 eggs

  • Chopped fresh cilantro or parsley for garnish

In a large skillet, heat a small amount of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they become translucent and fragrant. Next, add the finely chopped chicken and cook until it is no longer pink. As the chicken cooks, add the curry powder, turmeric, cumin, coriander, and cinnamon, stirring well to ensure the spices coat the meat evenly.

Once the chicken is cooked and the spices have melded together, stir in the apricot jam (if using) and lemon juice. Squeeze out the excess water from the soaked bread slices and crumble them into the mixture. Mix thoroughly until everything is well combined.

In a separate bowl, whisk together the low-fat milk, eggs, salt, and pepper. Pour this mixture over the chicken and spice mixture in the skillet, stirring gently to distribute the liquid evenly.

Transfer the mixture to a greased baking dish or individual ramekins for a more elegant presentation. Place the dish(es) in the preheated oven and bake for approximately 25-30 minutes, or until the tops turn golden brown and the custard is set.
