Ingredients:

  • 1 whole chicken, cut into pieces
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried thyme
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 tablespoon ground black pepper
  • 1 tablespoon salt
  • Vegetable oil, for frying

Instructions:

  • Place the chicken pieces in a large bowl and pour the buttermilk over them, ensuring they are fully submerged.
  • Cover the bowl with plastic wrap and refrigerate for at least 4 hours, or preferably overnight. This helps tenderize the chicken and infuse it with flavor.
  • In a shallow dish or bowl, combine the all-purpose flour, paprika, garlic powder, onion powder, dried thyme, ground coriander, ground cumin, ground black pepper, and salt. Mix well to ensure the spices are evenly distributed.
  • Remove the marinated chicken from the buttermilk, allowing any excess liquid to drip off.
  • Dredge each piece of chicken in the seasoned flour mixture, ensuring it is fully coated on all sides. Press the flour mixture firmly onto the chicken to create a thick, crispy crust.
  • In a large skillet or deep fryer, heat vegetable oil to 350°F (180°C).
  • Carefully place the coated chicken pieces into the hot oil, being careful not to overcrowd the skillet. Fry in batches if necessary to ensure even cooking.
  • Fry the chicken for about 12-15 minutes, turning occasionally, until golden brown and cooked through. The internal temperature should reach 165°F (75°C).
  • Once the chicken is cooked to perfection, transfer it to a wire rack or paper towels to drain any excess oil.
