A 15-Minute Lava Cake Recipe for When You Need a Little Chocolate

There are few things more satisfying than a warm, gooey chocolate dessert—especially one that doesn’t require hours in the kitchen. Whether you’re winding down from a long day, looking to impress a last-minute guest, or simply craving a rich treat, this 15-minute lava cake recipe delivers indulgence fast. With a molten center and lightly crisp edges, it’s everything you want from a chocolate dessert in a fraction of the time.

This recipe requires no fancy equipment, minimal ingredients, and zero frosting or decorating. It’s perfectly portioned, endlessly decadent, and makes a great last-minute dessert for date nights, solo treats, or small gatherings. Best of all, it uses pantry staples you probably already have on hand.

Ingredients (Serves 2)

  • 100g dark chocolate (60–70% cocoa), chopped
  • 80g unsalted butter
  • 2 large eggs
  • 50g granulated sugar
  • 1 tsp vanilla extract
  • 30g all-purpose flour
  • Pinch of salt
  • Optional: powdered sugar or berries for serving

Method

  1. Prep the ramekins: Preheat your oven to 200°C (390°F). Lightly grease two ramekins (around 170ml capacity) with butter and dust with a little cocoa powder or flour. This helps the cakes release easily after baking.
  2. Melt the chocolate and butter: In a heatproof bowl, combine the chopped chocolate and butter. Melt gently over a pan of simmering water (or in the microwave in short bursts), stirring until smooth. Set aside to cool slightly.
  3. Whisk the eggs and sugar: In a separate bowl, whisk the eggs, sugar, vanilla extract, and salt until the mixture is light and slightly thickened—about 1 to 2 minutes.
  4. Combine: Slowly pour the melted chocolate into the egg mixture while whisking continuously. Then sift in the flour and fold gently until just combined. Don’t overmix.
  5. Bake: Divide the batter evenly between the two ramekins. Bake in the preheated oven for 10–12 minutes, until the edges are set but the center still looks slightly soft. The exact time may vary depending on your oven, so keep an eye on them.
  6. Serve: Let the cakes rest for one minute, then run a knife around the edges and invert onto serving plates. Dust with powdered sugar, top with berries, or add a scoop of ice cream if you like.
