A Cheesy Green Shakshuka Recipe You’ll Want to Make on Repeat

If you’re looking for a delicious twist on a beloved breakfast classic, green shakshuka is where it’s at. This vibrant and cheesy version swaps the traditional tomato base for a mix of green vegetables and herbs, creating a fresh and flavourful dish that’s perfect any time of day. And when you add gooey, golden cheese to the mix? It takes things to the next level.

Green shakshuka is simple, comforting, and packed with nutrients — plus it’s all made in one pan. Here’s how to make this cheesy green shakshuka at home.

Ingredients:

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 2 cups baby spinach
  • 1 cup kale, chopped (stems removed)
  • ¼ cup fresh parsley or coriander, chopped
  • ½ tsp ground cumin
  • Salt and pepper to taste
  • 4 large eggs
  • ½ cup grated mozzarella or white cheddar
  • Optional: crumbled feta for topping

Instructions:
Heat the olive oil in a large skillet over medium heat. Add the onion and sauté until soft and translucent, about 5 minutes. Stir in the garlic and green pepper, cooking for another 2–3 minutes.

Add the spinach and kale and cook until wilted. Stir in the parsley or coriander, cumin, salt, and pepper. Use a spoon to make little wells in the mixture and crack the eggs into each one.

Cover the pan and cook for 6–8 minutes, or until the eggs are just set but the yolks are still slightly runny.

Sprinkle the grated cheese over the top and cover for another minute until it melts. If using feta, crumble it on just before serving.

Serve your cheesy green shakshuka hot with warm pita, crusty bread, or toasted sourdough.
