A Gazpacho Recipe to Beat the Heat

As temperatures rise and the sun beats down, there’s one dish that stands out as the epitome of refreshing summer fare: gazpacho. This chilled soup hails from the sun-kissed lands of Spain, where it has been enjoyed for centuries as a delicious way to cool down on sweltering days. Today, we’ll take a journey through the recipe for this classic dish, perfect for serving at picnics, barbecues, or simply as a light and satisfying meal on a hot day.

Ingredients:

  • 6 ripe tomatoes, cored and roughly chopped
  • 1 cucumber, peeled and roughly chopped
  • 1 red bell pepper, seeded and roughly chopped
  • 1 green bell pepper, seeded and roughly chopped
  • 1 small red onion, roughly chopped
  • 2 cloves of garlic, minced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper
  • 2 cups tomato juice or vegetable broth (optional, for a thinner consistency)
  • Optional garnishes: diced cucumber, red onion, bell pepper, croutons, fresh herbs (such as basil or parsley), a drizzle of olive oil

Instructions:

  1. Prepare the Vegetables: In a large bowl, combine the chopped tomatoes, cucumber, bell peppers, red onion, and minced garlic.
  2. Blend: Transfer the chopped vegetables to a blender or food processor in batches, depending on the size of your equipment. Pulse until the mixture is smooth and well combined. For a chunkier gazpacho, pulse the ingredients for a shorter amount of time.
  3. Season: Add the olive oil, red wine vinegar, lemon juice, salt, and black pepper to the blended vegetables. Taste and adjust the seasoning as needed, adding more salt or vinegar if desired.
  4. Chill: Cover the gazpacho and refrigerate for at least 1 hour, or until thoroughly chilled. This allows the flavors to meld together and enhances the refreshing nature of the soup.
  5. Serve: Ladle the chilled gazpacho into bowls and garnish with diced cucumber, red onion, bell pepper, croutons, fresh herbs, and a drizzle of olive oil, if desired. Serve immediately and enjoy!

Tips:

  • For a smoother texture, strain the gazpacho through a fine-mesh sieve before chilling.
  • Customize the recipe to suit your taste preferences by adjusting the amount of garlic, vinegar, or olive oil.
  • To make the gazpacho even more filling, add a handful of bread cubes to the blender before blending. This will thicken the soup and add a creamy texture.
