Ingredients

To make jerk chicken, you will need the following ingredients:

For the Marinade:

  • 4-6 chicken thighs and drumsticks (bone-in, skin-on for best results)
  • 2-3 Scotch bonnet peppers (adjust according to heat preference)
  • 1 onion, roughly chopped
  • 4-5 cloves garlic
  • 1 thumb-sized piece of ginger, peeled and chopped
  • 3-4 green onions (scallions), roughly chopped
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1/2 cup soy sauce
  • 1/4 cup vegetable oil
  • 1/4 cup white vinegar or lime juice
  • 2 tablespoons brown sugar
  • 2 teaspoons ground allspice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt

Optional Garnishes:

  • Fresh lime wedges
  • Chopped fresh cilantro

Instructions

  1. Prepare the Marinade: In a food processor or blender, combine the Scotch bonnet peppers, onion, garlic, ginger, green onions, thyme, soy sauce, vegetable oil, white vinegar (or lime juice), brown sugar, allspice, cinnamon, nutmeg, black pepper, and salt. Blend until you get a smooth paste. This is your jerk marinade.
  2. Marinate the Chicken: Place the chicken pieces in a large resealable plastic bag or a deep bowl. Pour the marinade over the chicken, making sure each piece is thoroughly coated. Seal the bag or cover the bowl and refrigerate for at least 4 hours, but preferably overnight. The longer the chicken marinates, the more intense the flavor will be.
  3. Prepare the Grill: For authentic jerk chicken, cooking over a charcoal grill is ideal to achieve the smoky flavor. If using a charcoal grill, set it up for indirect grilling by placing the coals to one side. If using a gas grill, preheat to medium heat and turn off one burner to create an indirect heat zone.
  4. Grill the Chicken: Remove the chicken from the marinade, letting any excess marinade drip off. Place the chicken pieces skin-side down on the indirect heat side of the grill. Cover the grill and cook for about 40-50 minutes, turning occasionally, until the chicken is cooked through and the skin is crispy. The internal temperature should reach 165°F (75°C).
  5. Optional Oven Method: If you don’t have a grill, you can bake the jerk chicken in the oven. Preheat the oven to 375°F (190°C). Place the marinated chicken on a baking sheet lined with aluminum foil. Bake for 45-50 minutes, turning halfway through, until the chicken is cooked and the skin is crispy.
  6. Serve: Transfer the grilled or baked jerk chicken to a serving platter. Garnish with fresh lime wedges and chopped cilantro if desired. Serve hot.

  • Adjusting Heat Levels: Scotch bonnet peppers are very hot. You can adjust the number of peppers to control the heat level or remove the seeds to reduce the spiciness.
