Bananas are a versatile and beloved fruit that can be enjoyed in various ways. While they are delicious on their own, they also make for a fantastic addition to baked goods. If you’re a fan of the sweet and comforting flavors of bananas, then a homemade Banana Cake is a must-try treat. This article will guide you through the steps of creating a moist and flavorful Banana Cake that will have everyone coming back for seconds.

Ingredients:

For the Cake:

  • 3 ripe bananas, mashed
  • 2 teaspoons lemon juice
  • 2 and ½ cups all-purpose flour
  • 1 and ½ teaspoons baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 and ½ cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 and ½ cups buttermilk

For the Cream Cheese Frosting:

  • 8 ounces cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line it with parchment paper.
  2. In a small bowl, combine the mashed bananas with lemon juice and set aside. The lemon juice will help prevent the bananas from browning and add a subtle tang to the cake.
  3. In another bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  4. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  5. Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. Stir in the vanilla extract.
  6. Gradually add the dry ingredients to the butter-sugar mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing just until combined after each addition. Be careful not to overmix.
  7. Fold in the mashed bananas, ensuring they are evenly distributed throughout the batter.
  8. Pour the batter into the prepared baking pan and spread it evenly.
  9. Bake in the preheated oven for approximately 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean. The cake should be golden brown and springy to the touch.
  10. Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
  11. While the cake is cooling, prepare the cream cheese frosting. In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
  12. Gradually add the powdered sugar, mixing on low speed until the ingredients are combined. Then increase the speed to medium-high and continue to beat until the frosting is light and fluffy. Stir in the vanilla extract.
  13. Once the cake has cooled, spread the cream cheese frosting evenly over the top. You can also frost the sides if desired.
  14. Slice and serve this delightful Banana Cake, savoring the moist and tender crumb and the delightful combination of flavors.
