Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (such as strawberries, blueberries, raspberries)

For the Berry Filling:

  • 2 cups mixed berries
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

For the Whipped Cream Frosting:

  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Prepare the berry filling by combining the mixed berries, sugar, cornstarch, and lemon juice in a saucepan. Cook over medium heat, stirring occasionally, until the mixture thickens and the berries soften. Remove from heat and let it cool.
  3. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  4. Add the softened butter to the dry ingredients and mix until the mixture resembles coarse crumbs.
  5. In another bowl, whisk together the eggs, sour cream, and vanilla extract until smooth.
  6. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix.
  7. Gently fold in the mixed berries until evenly distributed throughout the batter.
  8. Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.
  9. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  10. Remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  11. While the cakes are cooling, prepare the whipped cream frosting. In a large mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  12. Assemble the cake by placing one layer on a serving plate. Spread a layer of the berry filling on top, then top with a generous amount of whipped cream frosting. Place the second cake layer on top and repeat the process.
  13. Decorate the top of the cake with fresh berries, if desired.
  14. Chill the cake in the refrigerator for at least 1 hour before serving to allow the flavors to meld together.
  15. Slice and serve this Berry Dream Cake to your delighted guests, and watch as their taste buds dance with joy.
