Braai, the South African barbecue, is more than just a cooking method—it’s a cherished tradition that brings friends and family together over delicious, flame-grilled food. From juicy steaks to succulent chicken and flavorful sausages, a braai is an essential part of South African culture. Here are some classic braai meat recipes to help you host the perfect gathering.

1. Boerewors (Farmers’ Sausage)

Ingredients:

  • 1 kg beef, coarsely ground
  • 500 g pork, coarsely ground
  • 250 g pork fat, coarsely ground
  • 2 tsp salt
  • 2 tsp coriander seeds, toasted and ground
  • 1 tsp black pepper
  • 1 tsp nutmeg
  • 1 tsp cloves
  • 1/2 cup red wine vinegar
  • Sausage casings

Instructions:

  1. Mix the beef, pork, and pork fat in a large bowl.
  2. Add the salt, coriander, black pepper, nutmeg, and cloves. Mix well.
  3. Gradually add the vinegar while mixing until fully incorporated.
  4. Stuff the mixture into the sausage casings and twist into desired lengths.
  5. Grill over medium heat until cooked through and browned, turning frequently.

Serving Suggestion:
Serve with traditional pap (maize porridge) and a tomato and onion gravy.

2. Peri-Peri Chicken

Ingredients:

  • 1 whole chicken, spatchcocked
  • 4 cloves garlic, minced
  • 2-3 red chilies, chopped
  • 1 tsp smoked paprika
  • 1 tsp cayenne pepper
  • 1/2 cup lemon juice
  • 1/4 cup olive oil
  • Salt and black pepper to taste

Instructions:

  1. In a bowl, mix the garlic, chilies, smoked paprika, cayenne pepper, lemon juice, olive oil, salt, and black pepper to make the marinade.
  2. Rub the marinade all over the chicken, ensuring it is well coated. Let it marinate for at least 2 hours, preferably overnight.
  3. Preheat the grill to medium-high heat. Place the chicken skin-side down and grill for 10-15 minutes.
  4. Flip the chicken and continue grilling for another 20-25 minutes, or until the chicken is cooked through and the skin is crispy.

Serving Suggestion:
Serve with a fresh salad and crusty bread to soak up the spicy marinade.

3. Lamb Chops with Mint and Garlic Marinade

Ingredients:

  • 8 lamb chops
  • 3 cloves garlic, minced
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • Salt and black pepper to taste

Instructions:

  1. In a bowl, combine the garlic, mint, olive oil, lemon juice, salt, and black pepper.
  2. Place the lamb chops in a large dish and pour the marinade over them. Ensure they are well coated. Marinate for at least 1 hour.
  3. Preheat the grill to high heat. Grill the lamb chops for 3-4 minutes per side for medium-rare, or longer for desired doneness.

Serving Suggestion:
Serve with grilled vegetables and a side of couscous.

4. Beef Ribs with Sticky Barbecue Sauce

Ingredients:

  • 1 kg beef ribs
  • 1 cup barbecue sauce
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • Salt and black pepper to taste

Instructions:

  1. Preheat the grill to low heat.
  2. Season the ribs with salt and black pepper.
  3. In a bowl, mix the barbecue sauce, honey, soy sauce, and Worcestershire sauce.
  4. Place the ribs on the grill and cook slowly for 1-2 hours, turning occasionally.
  5. Brush the ribs with the barbecue sauce mixture during the last 30 minutes of grilling.

Serving Suggestion:
Serve with potato salad and coleslaw.

5. Grilled Snoek with Apricot Basting

Ingredients:

  • 1 whole snoek, cleaned and butterflied
  • 1/2 cup apricot jam
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and black pepper to taste

Instructions:

  1. Preheat the grill to medium heat.
  2. In a small bowl, mix the apricot jam, lemon juice, olive oil, garlic, salt, and black pepper to make the basting sauce.
  3. Place the snoek on the grill, skin-side down, and cook for about 10-15 minutes.
  4. Baste the snoek with the apricot sauce, flip, and cook for another 5-10 minutes until the fish is cooked through.

Serving Suggestion:
Serve with a simple green salad and a lemon wedge.
