Ingredients:

For the Cake:

  • 2 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 ½ cups unsalted butter, softened
  • 2 cups packed brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

For the Butterscotch Frosting:

  • 1 cup unsalted butter
  • 2 cups packed brown sugar
  • ½ cup heavy cream
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredient mixture to the butter-sugar mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing until just combined.
  5. Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula to ensure even baking.
  6. Bake for approximately 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  7. While the cakes cool, prepare the butterscotch frosting. In a saucepan, melt the butter over medium heat. Stir in the brown sugar and heavy cream. Bring the mixture to a boil, stirring constantly. Boil for 2 minutes, then remove from heat and let it cool for 10 minutes.
  8. Transfer the cooled butterscotch mixture to a mixing bowl. Gradually add the powdered sugar, vanilla extract, and a pinch of salt. Beat until smooth and creamy.
  9. Once the cakes are completely cooled, place one cake layer on a serving plate. Spread a generous layer of butterscotch frosting on top. Carefully place the second cake layer on top and frost the entire cake, including the sides.
  10. For an extra touch of decadence, you can drizzle some additional butterscotch sauce over the top of the cake.
