Ingredients:

For the Cake Layers:

  • 2 cups all-purpose flour
  • 1 and 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs, at room temperature
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the Chocolate Buttercream:

  • 1 cup unsalted butter, softened
  • 3 and 1/2 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 4-6 tablespoons heavy cream

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. Prepare the Cake Batter: In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add the eggs, milk, oil, and vanilla extract, and beat on medium speed for 2 minutes. Stir in the boiling water until the batter is smooth.
  3. Create the Ombre Effect: Divide the batter evenly into three separate bowls. Leave one bowl as is for the darkest layer. Add a small amount of cocoa powder to the second bowl for a medium-dark layer, and add more cocoa powder to the third bowl for the lightest layer.
  4. Bake the Cake Layers: Pour each batter into the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  5. Prepare the Chocolate Buttercream: In a large mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, cocoa powder, salt, vanilla extract, and heavy cream, beating until smooth and creamy. Adjust the consistency with more powdered sugar or cream as needed.
  6. Assemble the Cake: Once the cake layers have cooled, place the darkest layer on a serving plate or cake stand. Spread a layer of chocolate buttercream on top. Repeat with the medium-dark layer, followed by the lightest layer.
  7. Frost the Cake: Use the remaining chocolate buttercream to frost the top and sides of the cake, creating a smooth finish.
  8. Decorate (Optional): For added flair, decorate the cake with chocolate curls, sprinkles, or fresh berries.
  9. Chill and Serve: Refrigerate the Choc Ombre Cake for at least 30 minutes before slicing and serving. This allows the layers to set and the flavors to meld together.
