Cookies & Cream Cake Recipe

Whether you’re celebrating a special occasion or simply craving a decadent treat, this Cookies & Cream Cake recipe is sure to delight your taste buds. With layers of moist chocolate cake, creamy frosting, and chunks of cookie goodness, this cake is a guaranteed crowd-pleaser. Follow along as we guide you through the steps to create your own masterpiece in the kitchen.

Ingredients:

For the Chocolate Cake:

  • 2 cups all-purpose flour
  • 1¾ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1½ teaspoons baking powder
  • 1½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs, at room temperature
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the Cookies & Cream Frosting:

  • 1½ cups unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • ¼ cup heavy cream
  • 10 chocolate sandwich cookies, crushed

For Garnish:

  • Additional chocolate sandwich cookies, crushed

Instructions:

  1. Prepare the Chocolate Cake:
  • Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  • In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
  • Stir in the boiling water until the batter is well combined. The batter will be thin.
  • Divide the batter evenly among the prepared cake pans.
  • Bake for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  1. Prepare the Cookies & Cream Frosting:
  • In a large mixing bowl, beat the softened butter until smooth and creamy.
  • Gradually add the powdered sugar, one cup at a time, beating well after each addition.
  • Add the vanilla extract and heavy cream, and beat on medium-high speed until light and fluffy.
  • Fold in the crushed chocolate sandwich cookies until evenly distributed throughout the frosting.
  1. Assemble the Cake:
  • Once the cake layers have cooled completely, place one layer on a serving plate or cake stand.
  • Spread a layer of cookies and cream frosting evenly over the top of the cake layer.
  • Repeat this process with the remaining cake layers and frosting.
  • Use the back of a spoon or an offset spatula to smooth the frosting on the top and sides of the cake.
  • Garnish the top of the cake with additional crushed chocolate sandwich cookies for added texture and visual appeal.
  1. Serve and Enjoy:
  • Slice the cake with a sharp knife and serve each slice with a glass of cold milk or a scoop of vanilla ice cream for the ultimate indulgence.
  • Store any leftover cake in an airtight container in the refrigerator for up to 3-4 days.
