There’s something undeniably delightful about sinking your fork into a moist, decadent slice of cake. And when that cake boasts not one, but two layers of deliciousness, you know you’re in for a treat. Get ready to elevate your baking game with this irresistible Double Decker Cake recipe that’s sure to impress even the most discerning dessert lovers.

Ingredients:

For the Cake Layers:

  • 2 cups all-purpose flour
  • 1 and 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs, at room temperature
  • 1 cup buttermilk, at room temperature
  • 1/2 cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water

For the Chocolate Buttercream Frosting:

  • 1 cup unsalted butter, softened
  • 3 and 1/2 cups confectioners’ sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 4 tablespoons heavy cream or milk

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Prepare the Cake Batter: In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add the eggs, buttermilk, vegetable oil, and vanilla extract. Beat on medium speed until well combined. Reduce speed and carefully add the boiling water to the cake batter. Beat on high speed for about 1 minute to add air to the batter.
  3. Bake the Cake Layers: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Remove from the oven and allow the cakes to cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
  4. Prepare the Chocolate Buttercream Frosting: In a large mixing bowl, beat the softened butter until creamy. Gradually add the confectioners’ sugar, cocoa powder, salt, vanilla extract, and heavy cream or milk. Beat on high speed until light and fluffy, scraping down the sides of the bowl as needed.
  5. Assemble the Cake: Once the cake layers have cooled completely, place one layer on a serving plate or cake stand. Spread a generous layer of chocolate buttercream frosting evenly over the top. Carefully place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
  6. Serve and Enjoy: Slice the Double Decker Cake into generous portions and serve. This cake pairs perfectly with a cold glass of milk or a piping hot cup of coffee.
