Eclipse Restaurant elevates guest experience with new menu

The commencement of a new season coincides with cutting-edge culinary experiences at Hotel Sky Sandton. Eclipse Restaurant has carefully crafted a new menu that’s packed with flavour and soul-warming dishes. Whether you want to get around a fruity and warming Middle Eastern tagine, order up a casserole with plenty of flavour or hunker down with friends over pizza – you’ll find it all at this contemporary dining restaurant.

Guests will be treated to vibrant dishes that sing with depth of flavour served in the bright, sleek space, complemented by a curated wine list. These captivating dishes include starters such as wasabi lobster tail (tempura lobster tail topped with wasabi mayo, yuzu dressing, chilli oil and green mango salad), spiced lamb croquettes (slow-cooked lamb with yoghurt dressing, a touch of curry oil, toasted curry leaf and pickled carrot salad), Korean fried pork belly bao buns (glazed pork belly stuffed in soft, pillowy bao buns with buttermilk dressing, teriyaki and sriracha pickled cabbage) and garlic and chilli gambas(plump pan-roasted tiger prawns spiked with garlic and chilli, served with confit tomato, fennel cream and citrus focaccia).

The main courses capture Eclipse Restaurant’s modern, fashionable flair – think pan-roasted sea bass (with carrot and shallot escabeche, trout roe fumet and fondant potato to accompany the crispy fish), New York striploin (marinated in a flavourful Korean glaze with chimichurri, crisp salad and hand-cut fries), oxtail casserole (deliciously rich slow-braised oxtail with Parmesan pomme purée and roasted baby vegetables) and lamb shank tagine (a fragrant Moroccan classic with braised lamb shanks, tagine spices, sea salt-roasted beetroot and herb risotto). Eclipse Restaurant also continues to delight food lovers with favourites such as fresh oysters, handmade falafels, line fish ceviche, wagyu tartare, confit duck leg, peri peri chicken thighs, wild mushroom pappardelle and cauliflower steak, plus a variety of salads and pizzas.

The grand finale to an exquisite lunch or dinner is the choice of new dessert items that include irresistible baked chocolate tart with tangerine gelato, pistachio praline and berry meringue on the side, or light and smooth cardamom crème caramel with red peppercorn shortbread, milk sorbet and shiraz jelly. Meanwhile, the wine list features a comprehensive collection of labels from the Stellenbosch, Franschhoek, Durbanville, Constantia and Robertson regions and beyond, with an emphasis on contemporary producers.

Live music and entertainment on select evenings every month adds a special touch to the gastronomic experience for guests.
