  1. Braaied Lamb Chops with Herbed Yogurt Sauce: Ingredients:
  • Lamb chops
  • Olive oil
  • Salt and pepper
  • Lemon juice
  • Fresh herbs (such as rosemary, thyme, and oregano)
  • Greek yogurt
  • Garlic
  • Lemon zest

Method:

  1. Marinate the lamb chops in a mixture of olive oil, lemon juice, salt, pepper, and chopped herbs for at least 30 minutes.
  2. Prepare the herbed yogurt sauce by combining Greek yogurt, minced garlic, lemon zest, and a pinch of salt.
  3. Grill the marinated lamb chops on a hot braai (barbecue) until cooked to your desired level of doneness.
  4. Serve the grilled lamb chops with the herbed yogurt sauce for a flavorful protein-rich meal.
  5. Bobotie with Lamb: Ingredients:
  • Ground lamb
  • Onion
  • Garlic
  • Curry powder
  • Turmeric
  • Ground cumin
  • Ground coriander
  • Bread crumbs
  • Milk
  • Eggs
  • Apricot jam
  • Lemon juice
  • Bay leaves

Method:

  1. Sauté chopped onions and minced garlic in a pan until golden brown.
  2. Add the ground lamb and cook until browned. Stir in the curry powder, turmeric, cumin, and coriander.
  3. In a separate bowl, soak the bread crumbs in milk and then add them to the lamb mixture.
  4. Beat the eggs and combine them with apricot jam and lemon juice. Add this mixture to the lamb mixture as well.
  5. Pour the mixture into a greased baking dish, top it with bay leaves, and bake at 180°C (350°F) for about 45 minutes or until golden and set.
  6. Serve the bobotie with rice, chutney, and a fresh salad for a balanced and protein-packed meal.
  7. Lamb Potjie: Ingredients:
  • Lamb stewing meat
  • Olive oil
  • Onion
  • Garlic
  • Carrots
  • Potatoes
  • Beef stock
  • Tomato paste
  • Worcestershire sauce
  • Fresh herbs (such as rosemary and thyme)
  • Salt and pepper

Method:

  1. Heat olive oil in a large potjie pot or heavy-based pot.
  2. Brown the lamb stewing meat in the pot. Remove the meat and set it aside.
  3. In the same pot, sauté chopped onions and minced garlic until translucent.
  4. Add sliced carrots, cubed potatoes, tomato paste, Worcestershire sauce, beef stock, and the browned lamb meat.
  5. Season with salt, pepper, and fresh herbs. Cover the pot and simmer on low heat for 2-3 hours or until the lamb is tender.
  6. Serve the lamb potjie with fresh bread or rice for a hearty protein-rich meal.
