Healthy South African Snoek Recipes for a Protein-Rich Meal.

South Africa is renowned for its rich culinary heritage, and one dish that stands out is snoek. Snoek is a delicious and versatile fish that is abundant in South African waters. It’s not only incredibly flavourful but also packed with protein and essential nutrients. In this article, we’ll explore some healthy snoek recipes that will delight your taste buds while providing you with a protein-rich meal.

  1. Grilled Snoek with Lemon and Herbs:

Ingredients:

  • 1 medium-sized snoek, cleaned and scaled
  • Juice of 2 lemons
  • 2 tablespoons olive oil
  • 2 cloves of garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions:

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, combine the lemon juice, olive oil, minced garlic, and chopped thyme. Season with salt and pepper.
  3. Place the snoek on a clean grilling rack and brush the marinade mixture generously over both sides of the fish.
  4. Grill the snoek for about 6-8 minutes on each side or until the flesh is opaque and flakes easily with a fork.
  5. Serve the grilled snoek with a squeeze of fresh lemon juice and garnish with additional herbs if desired. Pair it with a side of steamed vegetables or a fresh salad for a complete protein-rich meal.
  6. Snoek Bobotie:

Ingredients:

  • 500g snoek fillets, deboned and flaked
  • 1 onion, finely chopped
  • 2 tablespoons olive oil
  • 2 cloves of garlic, minced
  • 2 tablespoons curry powder
  • 2 tablespoons apricot jam
  • 2 tablespoons chutney
  • 2 slices of bread, soaked in milk
  • 2 eggs
  • 250ml milk
  • Salt and pepper to taste
  • 1 tablespoon almonds, slivered (optional)

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat. Sauté the onions until translucent, then add the minced garlic and curry powder. Cook for an additional minute.
  3. Add the flaked snoek to the skillet and cook for 3-4 minutes, stirring gently to combine with the onion mixture.
  4. Remove the skillet from the heat and stir in the apricot jam and chutney. Season with salt and pepper.
  5. In a separate bowl, combine the soaked bread (squeeze out any excess milk), eggs, and milk. Whisk until well combined.
  6. Grease a baking dish and pour the snoek mixture into it. Pour the egg and milk mixture over the top.
  7. If desired, sprinkle slivered almonds on top for added texture and flavor.
  8. Bake the bobotie in the preheated oven for 35-40 minutes or until the top is golden brown and set.
  9. Allow the bobotie to cool slightly before serving. Enjoy it with fragrant rice and a side of vegetables for a satisfying protein-rich meal.
