Basic Method for Fruit Cordials

  4. Simmer gently until the fruit softens and releases its juice (10–20 minutes depending on the fruit).

Citrus Cordial Recipe (Orange and Lemon)

Ingredients:

  • 2 large local oranges, zest and juice
  • 1 lemon, zest and juice
  • 4 cups water
  • 1 cup sugar

Method:

  1. Place the orange and lemon zest in a pot with water. Simmer for 5 minutes.
  2. Remove from heat, strain, and discard the zest.
  3. Add the juice of the orange and lemon to the liquid.
  4. Stir in sugar over low heat until fully dissolved.
  5. Cool completely and pour into sterilised bottles. Serve diluted with sparkling water.

Berry Cordial Recipe (Strawberries or Mulberries)

Ingredients:

  • 2 cups fresh local strawberries or mulberries
  • 3 cups water
  • ¾ cup sugar

Method:

  1. Chop the berries lightly and place them in a pot with water. Simmer for 10 minutes until softened.
  2. Strain the mixture to remove seeds and pulp, pressing gently to extract juice.
  3. Return the juice to the pot, add sugar, and stir until dissolved.
  4. Cool completely and bottle. Dilute as desired for drinks or pour over desserts.

Spiced Apple or Pear Cordial Recipe

Ingredients:

  • 3 large apples or pears, peeled, cored, and chopped
  • 1 cinnamon stick
  • 3 cloves
  • 4 cups water
  • ½–¾ cup sugar (adjust to taste)
  • Juice of ½ lemon

Method:

  1. Place the chopped fruit, cinnamon, cloves, and water in a pot. Simmer for 15–20 minutes until the fruit is soft and fragrant.
  2. Strain the liquid to remove solids and spices.
  3. Add sugar and lemon juice, stir until fully dissolved.
  4. Cool completely and bottle. Serve warm with hot water or chilled with soda.
