Hot Mud Pudding Cake Recipe

Ingredients:

  • 250g dark chocolate (preferably 70% cocoa), chopped
  • 200g unsalted butter, cubed
  • 200g granulated sugar
  • 4 large eggs
  • 100g all-purpose flour
  • 30g cocoa powder
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 250ml hot water
  • Ice cream or whipped cream, to serve

Instructions:

  1. Preheat your oven to 180°C (350°F) and grease a baking dish with butter or cooking spray.
  2. In a heatproof bowl, combine the chopped dark chocolate and cubed butter. Place the bowl over a pot of simmering water, ensuring that the bottom of the bowl does not touch the water. Stir the chocolate and butter until melted and smooth. Remove from heat and set aside to cool slightly.
  3. In a separate bowl, whisk together the granulated sugar and eggs until pale and fluffy.
  4. Gradually pour the melted chocolate mixture into the egg mixture, whisking constantly to combine.
  5. Sift in the all-purpose flour, cocoa powder, and a pinch of salt. Gently fold the dry ingredients into the chocolate mixture until just combined. Be careful not to overmix.
  6. Stir in the vanilla extract until evenly incorporated.
  7. Transfer the batter to the prepared baking dish and spread it out evenly.
  8. In a small saucepan, heat the water until just simmering.
  9. Carefully pour the hot water over the batter in the baking dish. Do not stir.
  10. Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top of the pudding cake is set and slightly firm to the touch.
  11. Remove the baking dish from the oven and allow the pudding cake to cool for a few minutes before serving.
  12. To serve, scoop the warm pudding cake into individual bowls and top with a dollop of ice cream or whipped cream.
