How To Make Bunny Chow The South African Way

  • 4 hollowed-out bread loaves (white or brown bread)
  • 500g lamb, chicken, or vegetable curry (prepared beforehand)

  • 2 tomatoes, chopped

Instructions:

1. Prepare the Curry:

  • In a large pot or skillet, heat the vegetable oil over medium heat.
  • Add the chopped onion and cook until translucent.
  • Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  • Add the chopped tomatoes and cook until they start to break down.
  • Stir in the curry powder, ground cumin, ground coriander, turmeric, salt, and pepper, ensuring that the spices are well combined.
  • Add the chosen protein (lamb, chicken, or vegetables) to the pot, stirring to coat it evenly with the spice mixture.
  • Allow the curry to simmer for 20-30 minutes, or until the meat is tender and the flavors have melded together. If using vegetables, cook until they are soft but not mushy.

2. Prepare the Bread:

  • While the curry is simmering, prepare the bread loaves by cutting a square-shaped hole in the top and scooping out the soft bread from the center, leaving a hollowed-out shell.
  • Reserve the scooped-out bread for dipping or other recipes.

3. Assemble the Bunny Chow:

  • Once the curry is ready, ladle it into the hollowed-out bread loaves, ensuring that each loaf is generously filled with the flavorful curry.
  • Garnish with fresh coriander leaves and chopped chilies for extra heat, if desired. Serve and enjoy.
