How to Make Calzones at Home

Calzones, the Italian folded pizza, are a versatile and delicious dish you can easily prepare at home. With a golden crust and a customizable filling, calzones are perfect for family meals, parties, or even quick snacks. Here’s a step-by-step guide to help you make calzones at home.

Ingredients
For the dough:

  • 3 ½ cups all-purpose flour
  • 1 tsp sugar
  • 1 tsp salt
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 ¼ cups warm water
  • 2 tbsp olive oil

For the filling:

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup cooked and crumbled Italian sausage (optional)
  • ½ cup sliced pepperoni or diced vegetables (e.g., mushrooms, bell peppers, or spinach)
  • ½ cup marinara sauce (for serving)

For brushing:

  • 1 egg, beaten

Instructions

Step 1: Make the Dough
In a small bowl, combine the warm water and yeast. Let it sit for 5 minutes until it becomes foamy.
In a large mixing bowl, combine the flour, sugar, and salt. Add the yeast mixture and olive oil. Mix until a dough forms.
Knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic.
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise for 1-2 hours, or until it doubles in size.

Step 2: Prepare the Filling
In a medium bowl, mix the ricotta, mozzarella, and Parmesan cheeses.
Add your preferred fillings like sausage, pepperoni, or vegetables. Mix well.

Step 3: Shape the Calzones
Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
Punch down the risen dough and divide it into 4-6 equal portions. Roll each portion into a circle about 6-8 inches in diameter.
Spoon a generous amount of filling onto one half of each circle, leaving a 1-inch border.

Step 4: Seal the Calzones
Fold the other half of the dough over the filling to create a half-moon shape.
Press the edges firmly together and crimp them with a fork to seal.

Step 5: Bake the Calzones
Place the calzones on the prepared baking sheet. Brush the tops with the beaten egg for a golden finish.
Bake for 20-25 minutes, or until the calzones are golden brown.
Let them cool slightly before serving.

Tips for Success
Experiment with fillings like spinach and feta, chicken and pesto, or mushrooms and caramelized onions.
Avoid overfilling to prevent the calzones from bursting during baking.
Use a pizza stone for an extra-crispy crust.
Serve with warm marinara or garlic butter on the side for dipping.
