How to Make Chicken Adobo at Home

Chicken Adobo is a classic Filipino dish known for its bold flavors, thanks to a delicious combination of soy sauce, vinegar, garlic, and spices. It’s easy to make, comforting, and perfect for any occasion. Here’s how you can make this flavorful dish at home.

Ingredients

  • Chicken: Bone-in, skin-on chicken thighs or drumsticks work best for this dish.
  • Soy sauce: For marinating the chicken and creating a savory base.
  • Vinegar: Traditionally, white vinegar or cane vinegar is used.
  • Garlic: Minced or smashed garlic adds depth to the flavor.
  • Bay leaves: To infuse a subtle herbal taste.
  • Peppercorns: Whole black peppercorns add spice.
  • Onion: Optional, but thinly sliced onions can add sweetness and extra flavor.
  • Oil: For browning the chicken.
  • Water: To help create a sauce and balance the vinegar’s tanginess.

Instructions

Step 1: Marinate the Chicken

  • In a bowl, combine soy sauce, vinegar, minced garlic, bay leaves, and peppercorns.
  • Add the chicken pieces to the marinade and mix well to coat.
  • Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, though 1-2 hours is preferable for deeper flavor.

Step 2: Brown the Chicken

  • Heat a large pan or skillet over medium heat and add a small amount of oil.
  • Remove the chicken from the marinade, reserving the liquid, and brown the chicken pieces in the hot oil.
  • Cook the chicken for about 4-5 minutes on each side until golden brown. This step helps develop rich flavors and a nice texture.

Step 3: Simmer the Adobo

  • Once the chicken is browned, pour the reserved marinade over the chicken in the pan.
  • Add enough water to cover the chicken, then bring to a simmer.
  • Add the onion slices if using, and cook the chicken uncovered for 25-30 minutes, or until the chicken is tender and the sauce has reduced.

Step 4: Adjust the Sauce

  • Taste the sauce and adjust the seasoning. You can add more soy sauce for saltiness, vinegar for tanginess, or pepper for spice, depending on your preferences.
  • Continue to simmer the sauce for a few more minutes if you want it thicker or more concentrated.

Step 5: Serve

  • Once the chicken is fully cooked and the sauce has thickened to your liking, remove the chicken from the pan.
  • Serve the chicken adobo over steamed white rice, spooning the sauce over the top.

Tips for the Perfect Chicken Adobo

  1. Marinate the chicken: The longer you marinate, the more flavorful the chicken will be.
  2. Use bone-in chicken: Bone-in cuts, like thighs or drumsticks, are best for this dish as they remain juicy and tender while cooking.
  3. Adjust the tanginess: If you prefer a milder flavor, reduce the vinegar or add a bit of sugar to balance the acidity.
  4. Make it ahead: Chicken Adobo tastes even better the next day as the flavors continue to develop.
