How to Make Chicken Kiev at Home

Chicken Kiev is a classic dish that features juicy chicken breasts stuffed with garlic butter, coated in breadcrumbs, and fried to golden perfection. While it may seem like a restaurant dish, it’s surprisingly simple to make at home. Here’s a step-by-step guide to preparing this crowd-pleasing recipe.

Ingredients You’ll Need:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup unsalted butter, softened
  • 2 garlic cloves, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon lemon juice
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups breadcrumbs
  • Salt and pepper to taste
  • Oil for frying

Step 1: Make the Garlic Butter

In a small bowl, combine the softened butter, minced garlic, chopped parsley, and lemon juice. Mix well until smooth. Shape the butter mixture into a log, wrap it in plastic wrap, and freeze for at least 30 minutes. This will make it easier to stuff the chicken.

Step 2: Prepare the Chicken

Place the chicken breasts between two sheets of plastic wrap and pound them gently with a meat mallet or rolling pin until they are about 1/2 inch thick. Be careful not to tear the meat. Season both sides of the chicken with salt and pepper.

Step 3: Stuff the Chicken

Cut the frozen garlic butter into four equal portions. Place one portion in the center of each chicken breast. Fold the sides of the chicken over the butter and roll it up tightly, securing the edges to seal the butter inside. Use toothpicks if necessary to keep the rolls intact.

Step 4: Coat the Chicken

Set up a breading station with three shallow bowls: one for flour, one for beaten eggs, and one for breadcrumbs. Dredge each chicken roll in the flour, then dip it in the egg, and finally coat it in breadcrumbs. For a crispier texture, repeat the egg and breadcrumb steps.

Step 5: Fry the Chicken

Heat about 1 inch of oil in a large skillet over medium heat. Carefully place the chicken rolls in the hot oil, seam side down, and fry for 2–3 minutes on each side until golden brown. Transfer the chicken to a baking sheet.

Step 6: Bake to Finish

Preheat your oven to 180°C (350°F). Bake the chicken for 15–20 minutes to ensure it’s fully cooked. The internal temperature should reach 75°C (165°F). Let the chicken rest for a few minutes before serving.

Step 7: Serve and Enjoy

Serve your Chicken Kiev with a side of mashed potatoes, steamed vegetables, or a fresh salad. Cut into the chicken to reveal the melted garlic butter for a show-stopping moment.

Tips for Success

  • Make sure the butter is completely frozen before stuffing the chicken to prevent it from leaking during cooking.
  • Use Panko breadcrumbs for an extra-crispy coating.
  • For a healthier option, bake the chicken instead of frying it, though the crispness may vary.
  • Be gentle when pounding the chicken to avoid tearing the meat.
