How to make Koeksisters the South African way

Koeksisters are a beloved South African delicacy that boasts a unique blend of sweetness, spice, and texture. These twisted, syrup-soaked pastries are a staple at family gatherings, celebrations, and community events across the country. While their origins trace back to Dutch and Cape Malay influences, koeksisters have become an integral part of South African culinary tradition. Here, we delve into the art of making koeksisters the South African way, ensuring that you can recreate this mouthwatering treat in your own kitchen.

Ingredients:

For the dough:

  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons butter, room temperature
  • 1 large egg
  • 1 cup milk

For the syrup:

  • 4 cups white sugar
  • 2 cups water
  • 1 cinnamon stick
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon cream of tartar

Instructions:

  1. Prepare the dough: In a large mixing bowl, sift together the flour, baking powder, and salt. Add the butter and rub it into the dry ingredients until the mixture resembles coarse breadcrumbs.
  2. Add the wet ingredients: In a separate bowl, whisk together the egg and milk. Gradually pour the wet ingredients into the dry ingredients, stirring until a soft dough forms. Knead the dough on a floured surface until smooth and elastic.
  3. Rest the dough: Cover the dough with plastic wrap and let it rest at room temperature for at least 1 hour, allowing the gluten to relax and the flavors to develop.
  4. Prepare the syrup: In a large saucepan, combine the sugar, water, cinnamon stick, ground ginger, ground cloves, and cream of tartar. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, stirring occasionally, until the syrup thickens slightly. Remove the cinnamon stick and let the syrup cool to room temperature.
  5. Shape the koeksisters: Roll out the dough on a floured surface to a thickness of about 1/4 inch. Cut the dough into strips about 4 inches long and 1/2 inch wide. Using a sharp knife, make a lengthwise slit in the center of each strip, leaving about 1/2 inch uncut at each end. Twist each strip into a figure-eight shape, pressing the ends together to seal.
  6. Fry the koeksisters: Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully lower the koeksisters into the hot oil, a few at a time, and fry until golden brown and cooked through, about 3-4 minutes per batch. Remove the koeksisters from the oil using a slotted spoon and drain on paper towels.
  7. Soak in syrup: While still warm, dip the fried koeksisters into the cooled syrup, ensuring that they are fully submerged. Allow the koeksisters to soak in the syrup for a few minutes, then remove and place them on a wire rack to drain and cool completely.
  8. Serve and enjoy: Serve the koeksisters at room temperature as a decadent treat alongside a cup of tea or coffee. Store any leftovers in an airtight container at room temperature for up to 3-4 days.

Tips:

  • For a twist on tradition, try adding a splash of lemon juice or orange zest to the syrup for a citrusy flavor.
  • To achieve a crispier texture, fry the koeksisters at a slightly higher temperature.
  • Don’t overcrowd the fryer or pot when frying the koeksisters, as this can lower the oil temperature and result in soggy pastries.
