Lasagna, a beloved Italian classic, is a hearty dish made with layers of pasta, rich meat sauce, and a cheesy filling. Whether you’re a seasoned cook or a beginner in the kitchen, making lasagna at home is a rewarding and delicious experience. Here’s a simple, step-by-step guide on how to make lasagna from scratch.

Ingredients:

For the Meat Sauce:

  • 1 lb (450g) ground beef or pork (or a mix of both)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 1 cup red wine (optional)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Olive oil for sautéing

For the Ricotta Filling:

  • 2 cups ricotta cheese
  • 1 egg
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

For the Lasagna:

  • 12-15 lasagna noodles (store-bought or homemade)
  • 2 cups shredded mozzarella cheese
  • Fresh basil leaves (optional, for garnish)

Instructions:

Step 1: Prepare the Meat Sauce

  1. Cook the meat: Heat olive oil in a large skillet over medium heat. Add the ground beef or pork and cook, breaking it apart with a wooden spoon until browned. Drain excess fat if necessary.
  2. Add the vegetables: Stir in the chopped onion and garlic, and cook until softened, about 5 minutes.
  3. Simmer the sauce: Add the crushed tomatoes, tomato paste, red wine (if using), oregano, and basil. Season with salt and pepper. Bring to a simmer, then lower the heat and let it cook for 30-40 minutes, stirring occasionally. The sauce should be thick and flavorful.

Step 2: Prepare the Ricotta Filling

  1. In a large mixing bowl, combine the ricotta cheese, egg, mozzarella, and Parmesan cheese. Stir until smooth.
  2. Season with salt and pepper to taste.

Step 3: Cook the Lasagna Noodles

  1. If using store-bought noodles, bring a large pot of salted water to a boil. Cook the lasagna noodles according to the package instructions, usually for 8-10 minutes. Drain and set aside.
  2. If using fresh or no-boil noodles, follow the manufacturer’s instructions.

Step 4: Assemble the Lasagna

  1. Preheat the oven to 375°F (190°C).
  2. Spread a thin layer of meat sauce at the bottom of a 9×13-inch baking dish.
  3. Place a layer of cooked lasagna noodles over the sauce.
  4. Spread a layer of ricotta mixture over the noodles, followed by a generous amount of meat sauce.
  5. Sprinkle some shredded mozzarella cheese over the meat sauce.
  6. Repeat these layers (noodles, ricotta, sauce, mozzarella) until you run out of ingredients, finishing with a layer of meat sauce and mozzarella on top.

Step 5: Bake the Lasagna

  1. Cover the baking dish with aluminum foil and bake for 30 minutes.
  2. After 30 minutes, remove the foil and bake for an additional 10-15 minutes until the cheese is golden and bubbly.
  3. Let the lasagna rest for 10-15 minutes before slicing to allow it to set.

Step 6: Serve and Enjoy!

  1. Garnish with fresh basil if desired.
  2. Serve hot with a side salad and some garlic bread for a complete meal.

Tips for Perfect Lasagna:

  • Make it ahead: Lasagna can be assembled a day in advance. Just cover it and refrigerate until you’re ready to bake.
  • Try different cheeses: You can add provolone or fontina cheese for more depth of flavor.
  • Vegetarian option: Substitute the meat with sautéed vegetables like mushrooms, zucchini, and spinach for a delicious veggie lasagna.

Making lasagna at home allows you to tailor the flavors to your liking, and the result is a comforting and filling meal that’s perfect for family gatherings or special occasions. Enjoy the process and the delicious meal you’ve created!
