How to Make Lentil Soup at Home

Lentil soup is a hearty, nutritious dish that’s easy to prepare and perfect for any time of the year. Packed with protein, fiber, and essential vitamins, it’s a great option for vegetarians and anyone looking for a wholesome meal. Here’s a step-by-step guide to making delicious lentil soup in the comfort of your kitchen.

Ingredients

To serve 4-6 people, you’ll need:

  • 1 cup dried lentils (green, brown, or red)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon turmeric (optional)
  • 1 can (400g) diced tomatoes
  • 4 cups vegetable broth (or water)
  • Salt and pepper to taste
  • Fresh parsley or coriander for garnish (optional)
  • Lemon wedges for serving (optional)

Instructions

  1. Prepare the Lentils
    • Rinse the lentils thoroughly under cold water to remove any dirt or debris. Set them aside.
  2. Sauté the Vegetables
    • Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery, and sauté for 5-7 minutes until the vegetables are softened.
  3. Add Garlic and Spices
    • Stir in the minced garlic, cumin, smoked paprika, and turmeric. Cook for another minute until fragrant.
  4. Incorporate Tomatoes and Broth
    • Add the diced tomatoes and their juices, followed by the vegetable broth. Stir well to combine.
  5. Add the Lentils
    • Stir in the rinsed lentils. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 25-30 minutes, or until the lentils are tender.
  6. Season and Adjust
    • Taste the soup and season with salt and pepper as needed. If you prefer a smoother texture, use an immersion blender to puree part of the soup, leaving some chunks for a rustic feel.
  7. Serve and Garnish
    • Ladle the soup into bowls and garnish with chopped parsley or coriander. Serve with lemon wedges on the side for a zesty kick.

Tips for Customizing Lentil Soup

  • Add protein: Stir in cooked chicken, sausage, or tofu for extra protein.
  • Include greens: Toss in a handful of spinach, kale, or Swiss chard during the last 5 minutes of cooking.
