How to Make Mochi at Home

Mochi, a traditional Japanese rice cake, is chewy, sweet, and endlessly versatile. Whether filled with sweet red bean paste, ice cream, or enjoyed plain, mochi is a treat that’s surprisingly easy to make at home. Here’s how you can prepare this delightful dessert using simple ingredients and tools.

Ingredients

  • 1 cup glutinous rice flour (also known as mochiko)
  • 3/4 cup water
  • 1/4 cup sugar
  • Cornstarch, potato starch, or tapioca starch (for dusting)
  • Optional fillings: red bean paste, fresh fruit, or ice cream

Instructions

Start by preparing your workspace. Dust a clean surface or a large tray with starch to prevent sticking. Keep a rolling pin, knife, and plastic wrap handy.

In a microwave-safe bowl, mix the glutinous rice flour and sugar. Gradually add the water, stirring until you achieve a smooth batter with no lumps.

Cover the bowl with plastic wrap or a microwave-safe plate and microwave on high for 1 minute. Remove the bowl, stir the mixture thoroughly, and microwave again for another minute. Stir once more, then microwave for a final 30 seconds. The mixture should be sticky, translucent, and fully cooked.

Generously dust your prepared surface with starch. Transfer the cooked mochi onto it while it’s still hot. Use a rolling pin or your hands to flatten the mochi into a 1/4-inch thick layer. Let it cool slightly.

If you’re adding fillings, divide the mochi into small squares or circles using a knife or cookie cutter. Place a small amount of filling in the center of each piece, then gather the edges to seal it, forming a ball.

Dust the finished mochi with more starch to prevent sticking. If you prefer plain mochi, simply cut the flattened layer into bite-sized pieces.

Enjoy your homemade mochi immediately, or store it in an airtight container at room temperature for up to a day. For filled mochi, especially ice cream-filled ones, keep them in the freezer until ready to serve.

Making mochi at home is a fun and rewarding process that allows you to customize flavors and fillings. With its delightful chewiness and subtle sweetness, this treat is sure to impress your friends and family.
