How to Make Okonomiyaki at Home

Okonomiyaki is a savory Japanese pancake that combines a medley of ingredients for a dish that is both hearty and flavorful. Its name loosely translates to “grilled as you like it,” highlighting its customizable nature. Making okonomiyaki at home is simple and allows you to tailor it to your preferences. Here’s a step-by-step guide to creating this delicious dish.

Ingredients You’ll Need:

  • 1 cup all-purpose flour
  • 1/2 cup dashi or water (for authentic flavor, use dashi)
  • 1 egg
  • 2 cups finely shredded cabbage
  • 1/4 cup thinly sliced green onions
  • Optional fillings: cooked shrimp, thinly sliced pork belly, squid, or cheese
  • Okonomiyaki sauce (store-bought or homemade)
  • Japanese mayonnaise
  • Bonito flakes (optional)
  • Aonori (dried seaweed flakes)

Step 1: Prepare the Batter

In a large bowl, mix the flour, dashi (or water), and egg until smooth. The consistency should resemble pancake batter. Avoid overmixing to keep the batter light and airy. Once combined, fold in the shredded cabbage and green onions. If you’re using additional fillings like shrimp or pork, mix them into the batter at this stage.

Step 2: Preheat and Cook

Heat a non-stick frying pan or griddle over medium heat and lightly oil the surface. Pour a generous scoop of the batter onto the pan and shape it into a thick, round pancake. Cook for 3–5 minutes until the bottom is golden brown and firm enough to flip. Carefully turn it over using a spatula and cook the other side for another 3–5 minutes. If you’re using pork belly slices, lay them on top of the pancake before flipping so they cook to a crisp finish.

Step 3: Add the Toppings

Once the okonomiyaki is cooked through, transfer it to a plate. Generously spread okonomiyaki sauce over the surface using a spoon or brush. Drizzle Japanese mayonnaise in a zigzag pattern on top for extra creaminess. Sprinkle with aonori and bonito flakes for added umami and texture.

Step 4: Serve and Enjoy

Okonomiyaki is best enjoyed fresh off the pan while it’s still warm. Pair it with a side of pickled ginger or miso soup for a complete meal.

Tips for Customization

  • For a gluten-free version, use rice flour or gluten-free all-purpose flour.
  • Vegetarians can replace meat with mushrooms, tofu, or extra vegetables.
  • Experiment with different fillings like bacon, corn, or kimchi to suit your taste.
