How to Make Poutine at Home

Poutine, a beloved Canadian dish, is a comforting combination of crispy fries, rich gravy, and squeaky cheese curds. Making poutine at home is surprisingly easy and can be tailored to your preferences. Here’s a step-by-step guide to recreate this indulgent dish in your kitchen.

Ingredients:

For the fries:

  • 4 large russet potatoes
  • Vegetable oil (for frying)
  • Salt (to taste)

For the gravy:

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups beef or chicken broth (or a mix of both)
  • Salt and pepper (to taste)
  • Optional: 1 tablespoon of Worcestershire sauce for added depth

For the cheese curds:

  • 1 ½ cups fresh cheese curds (preferably white cheddar)

Instructions:

Step 1: Prepare the Fries

  1. Peel and Cut Potatoes: Peel the potatoes and cut them into thin fries. You can make them as thick or thin as you prefer, but classic poutine uses thinner fries for a crispy texture.
  2. Soak the Fries: Soak the cut potatoes in cold water for at least 30 minutes. This helps remove excess starch and ensures crispy fries.
  3. Heat the Oil: In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Use enough oil to fully submerge the fries.
  4. Fry the Potatoes: Fry the potatoes in batches to avoid overcrowding. Cook for 3-4 minutes or until golden and crispy.
  5. Drain and Season: Remove the fries and drain them on paper towels. While still hot, season them with salt.

Step 2: Make the Gravy

  1. Melt the Butter: In a saucepan, melt the butter over medium heat.
  2. Add the Flour: Stir in the flour and cook for 1-2 minutes to form a roux. This will thicken the gravy.
  3. Add the Broth: Gradually whisk in the broth, ensuring there are no lumps. Bring the mixture to a simmer and cook for 5-7 minutes, stirring occasionally, until it thickens.
  4. Season the Gravy: Add salt and pepper to taste. If you’d like a deeper flavor, you can add a tablespoon of Worcestershire sauce. Remove from heat once the gravy reaches the desired thickness.

Step 3: Assemble the Poutine

  1. Layer the Fries: Place the hot, crispy fries on a serving plate or dish.
  2. Add the Cheese Curds: Scatter the cheese curds over the fries. The heat from the fries will start to melt the curds slightly, giving them that signature gooey texture.
  3. Pour the Gravy: Generously ladle the warm gravy over the fries and cheese curds, ensuring the curds start to melt into the dish.

Step 4: Serve and Enjoy

Serve the poutine immediately while it’s hot and the cheese curds are still slightly melted. You can also garnish with fresh herbs like parsley or thyme for added flavor, though traditional poutine is simple and delicious as is.

Variations:

  • Vegan Poutine: Use plant-based cheese curds and vegetable broth to create a vegan version of poutine.
  • Loaded Poutine: Add toppings like pulled pork, caramelized onions, or sautéed mushrooms for a more decadent version.
  • Spicy Poutine: Add a drizzle of hot sauce or sprinkle chili flakes for some heat.

Poutine is the perfect comfort food, and making it at home allows you to enjoy it fresh and hot with customizable toppings. Whether you stick to the classic recipe or experiment with variations, this dish is sure to satisfy any craving for indulgent, savory flavors.
